Yeah I’d definitely prefer that salmon with coconut lime rice and the ice cream with cookies and caramel to Nick’s three scallops and lemon merengue. Only thing I’d give Nick is the appetizer

Hey, Pete! Mise en place means "everything in its place." It's just a term for prepping your ingredients beforehand. You're gonna use green onions? Slice them before you start cooking. You're gonna use garlic? Mince it or crush it or whatever before you start cooking. That's what mise en place means. Have everything prepped before you start. Not everyone does it, and it's not really necessary in most cases, but it can make cooking complex recipes much easier.
