Elo-jhelo nimki is a Bijoya staple in most Bengali households. It takes its whimsical name from its twisty-lacy structure. Also known as 'kamranga nimki' after the shape of the fruit by the same name, this deep-fried shortcrust pastry is characterised by its elegant spindle shape. A perfect nimki is not chewy but crisp; it breaks with a satisfying snap. In this video, we show you how to achieve nimki of the desired shape, colour, texture, and of course, flavour. It is best enjoyed with a cup of hot milky tea.

Just readthe article on Indian Express and saw that you guys disabled the comment section in that particular video. I won't comment about that, because after all, its you channel. But I will tell you one thing. I have discovered your channel a week back and since then became a fan of your recipes and your productions. Guys...i didn't know people knew what an elo jhelo was. My didu used to make these..and till today , before I came across this post I thought she had named it herself. She used to make sweet version of this..I can't tell you how emotional I became when I saw this post..it's silly to look at a cooking video and feel so overwhelmed..but am ..this brings back fondest memories of her..thank you for making this video..

Love this nimki, savoury or sweet. Up in the North of our country, this nimki is also known as the "karela namakpara" cuz it resembles the bitter gourd, in a way. We use it to make "karele ki chaat" with addl. toppings of aloo, chhole, pomegranate, dahi, kachaloo, sonth, hari chutney, etc. Lip smacking good.

There is this fried sweet by the name "Shimul fafra". It is exactly the same way you have made this nimki, only difference being it is finally coated with sugar syrup. Never found any content on shimul fafra, but this video elaborates a major part of that process as well. Thank you so much! I have learned so much from your channel. The explanations/tips that you provide during many of your videos are particularly helpful for people like me. :)

Guys- I ate elo jhelo at my aunt's house about 2 years ago.But I didn’t know the name of it,since it was so tasty that I forgot to ask its name😅 Then suddenly this video came at my youtube recommendations,and yeah,Tasfia and Elo-jhelo got united again! i hv been noticing in every vdo that your style of cutting the veggies r so much symmetric n neat. even in this vdo each n every nimki are identical to each other. n i think is really tough. i hv tried a few recipes of urs n those were damn tasty bt i couldn't bring that beautiful look to the food that u usually give...
