Recipe
*This recipe will not turn out as firm as a baked in the oven cheesecake.*
Graham Wafer Crust:
1-1/4 cup Graham wafer crumbs
1/3 cup melted butter
Mix the crumbs and butter together. Form into crust in ungreased pie plate.
Filling:
1 brick of Cream Cheese (226 g or 8oz)
1 can sweet condensed milk (300ml or 10oz)
1 tsp vanilla
1/3 cup of lemon juice
Mix everything together until smooth.
Pour the filling into the pie crust. Refrigerate for 5 hours or until filling is firm enough to cut into.

It turns out best if you use marscapone cheese with the condensed milk, you can also add double/whipping/heavy cream to make it richer and for special occasions omit the lemon juice and add melted chocolate - white or milk - instead. And you can also simply put the cheese mix in a loaf tin and freeze it for a delicious soft ice=cream that is lovely with fresh fruit or an apple /mincemeat tart, or even on Xmas puddings. Been making this for over half a century, another version ideal for children is to add a cool but not set jelly/jello and pour it over the top then put back in the fridge to set. Great for parties where there will be kids and you can add fresh fruit to the jelly/jello topping if desired. Mum would add strawberry jelly with fresh strawberries from the garden for a special Sunday pudding in summer. Lovely.

Use the lemon squeezer with lemons turned the other way…against the fruit not the peel. You’re welcome. ❤ Thank you for the recipe. I used two packages of cream cheese and added 1/2 C Lemon juice and zest. It was great!

Just cut those thicker peel lemons in fourths, easy squeeze, I do it with limes, because usually there is very little juice in a lime.

Love to have easy recipes for a quick dessert & this one fits the requirements. Only 2 suggestions for toppings, cool whip with a splash of lemon juice m0ixed in then top off pie OR use a can of blueberry pie filling & top off individual slice of pie with a large spoonful of the filling. I'm so hungry for a slice...just wish I had ingredients to make one now! Thanks for easy yet tasty dessert!
