Unfussy and fast, this is the icream I make when I want ice cream NOW. Not some gourmet dessert, it's simple enough to count as real food, and we treat it as such, often eating it as our meal --- served with a fruit crisp, or spooned into a bowl and then topped with homemade granola and fresh berries.

When I was a kid my Uncle had a dairy we all ways had raw milk this the ice cream we all ways make in a hand crank machine loved it .

Do 4-6 egg yolks and that will emulsify and make it freeze beautifully! I’ve done 8-12 egg yolks in one batch too and it’s ultra custardy and oh so good. 1tsp organic MCT oil will also slow the ice crystals.

Can you use coconut oil for the MCT oil?

@@jmilkslinger fractionated should be fine but I’m not sure if unrefined would have the same effect since it solidifies. The additional egg yolks alone should solve the issue. Plus it adds all those additional nutrients and protein!

So instructive! My recipe has a lot more milk, so I’m going to try yours. I whip it harder with the cream bc I thought that would help with lightness in the finished ice cream. Your tip with scraping the sides during churning is genius! Definitely going to do that. (I do make gourmet Jeni’s for other flavors, but agree with you on simple vanilla for everyday)

Re the scraping down the sides: I don't know why I never did it before --- it makes such a difference, I think!

So a video popped up in my recommendations this morning, from The Oliver Family Farm, or something like that. And the video was how to make caramel sauce out of whey. I would love to see you do this and get your reaction on the texture and taste! Seemed fitting after watching your ice cream video 😉

Freeze the sugar and your finished ice cream container ahead of time. I sometimes even freeze the beater. Things firm up much more quickly - especially on a warm day.

Of course you'll need a pie to go with it... This is why I love you. Keep whipping the hell out of it! ?? OH, HAVE YOU MADE A VIDEO OF MAKING CHEESE CURDS? I do home care for my elder brother who gets half-pint 1% milk from meals on wheels and he ends up with a surplus. So I'm always trying to find ways to use it up. Thx

No, whole milk. (Though I suppose there's a chance I'd skimmed off a little of it for something or other.) Skim milk defeats the purpose! 🥰
