Loved this vid! My husband & I were homeless for an entire year before we finally got our Section 8 apt/house. Sometimes we could afford a weekly room but often slept in the car in a hospital parking lot. Many of your tips I learned myself through trial and error❤ During that time I started a job at Kroger and hoped not to appear as if I had slept on a park bench. Good news i kept that job for 3 years.🎉

I want to thank you so much for your channel.... We are a family of 5 living in a suite hotel right now. We've been "homeless" for a few years now and I've learned a lot about cooking for my family without a oven and while the motel has a built in range, microwave and full size fridge.... the range doesn't get very hot so I use an electric skillet. With the economy being so bad right now after we pay for a roof over our heads and any other bills we have, sometimes all I have left to buy groceries for the week is about 35 to 100 dollars....I don't have a car but luckily live in walking distance to a few dollar stores. We are thrilled that we may actually be able to move into a house in the next few months!!! Until then I'm binge watching ALL your videos. Again, thank you so much.

I have been checking out places like Goodwill or Facebook for inexpensive/free furniture. I'm sure we will figure it all out. Just so excited to have a place to call home. Don't get me wrong I'm extremely thankful for what we have had. This room has been home for almost 3 years now and I am just thankful that we never had to live on the streets.... although it did come close. I can't wait to make memories like you said. I rented a room in a building with no kitchen in my early 20s. We had a mini fridge and a shared microwave, but that was it. I struggled with food every day until I bought a rice cooker. I could make anything with that thing. Anything you can make with a pot or frying pan you can make in a rice cooker. My favorite thing to do was spaghetti with meat sauce- brown and drain ground beef, add a jar of sauce, and add uncooked pasta directly in. Heat until the pasta is soft enough to eat.

I found you a little while ago because I was looking for Dollar Tree videos. As someone who is single, and hadn't cooked for themselves a lot in the past, as I was guilty of just running through fast food drive-thru's, or shopping for recipes that always ended up with at least four to six servings, food sometimes went to waste. I have really enjoyed your videos and definitely take notes. They are usually very quick and easy and that is very much appreciated. I clicked on this video especially because I am just in Awe of your compassion, kindness, and thoughtfulness to many folks out there who may have fallen on harder times/food or space limited, or yes, travel, camp, etc., and these tips are wonderful. I remember the year I spent renting a friend's basement, and had a dorm room sized fridge, a microwave, and a toaster oven. I used the bar sink for my water. I would have loved to have had this video for so many more ideas! Keep up the wonderful content, and I am spreading the word and hoping you get tons more subscribers!

A whole can of veggies is difficult when you are only one person, but they do may little cups of veggies that are same size as fruit cups. Variety is limited to green beans, peas, and carrots, but they are just the right size to add to a meal for one and then you don't have to deal with leftovers in your car or having to throw away.

I can understand that buying another appliance might just be out of the question, but if it is something you can consider, think about this. I bought a counter top induction cooking unit maybe a year ago. You can carry it around from room to room or even use it outdoors if there is an level cooking surface (such as a table) and a standard electric outlet. These units sell on Amazon starting around $60 and up. Sometimes cheaper on sale. I often thought if I were mostly confined to a space between bed and bathroom, I could cook in the bathroom if I have a counter top to work on (or set up a little table). You can use ordinary pots and pans so long as they are induction compatible. Some are, some aren't. You can fry, boil, and so forth. They take less electric to run than an electric stove, so they are economical in that respect. I currently have a normal kitchen at my disposal, but I routinely use one (placed next to my gas stove) for most things that I boil such as water, soups, stews, and so forth. I would not hesitate to travel with one and use it in a hotel room provided it is permissible by the establishment. In fact, I keep one in an old laptop case (in which it fits perfectly) and proclaim my motto "Have Stove, Will Travel."

I did have a two burner propane stove and basic kitchen idems. PSA don't get the cheep walmart camping cookware. It will just burn your food. So far the Gutsdoor 10 Pcs Camping Cookwares Mess Kit works well.

Another way to give yourself some versatility with leftovers (like the leftover lettuce or the green beans you didn't open because you didn't want to store them) is to have a cooler full of ice with a couple of the insulated containers stored inside with ice in them. Whenever you have something perishable to store, pull out a chilled container, dump out the ice, and pop in the perishable stuff. Then stash the chilled container back in the cooler surrounded by ice. It will stay cold a really long time, allowing you to use those leftovers for your next meal. And if you have a job, if it has a fridge in the break room, take full advantage of it!

Good information, Rebecca. Tasty, hot meals while you're camping make life even more enjoyable. A 'camp kitchen' in a wooden box helps a great deal. When weather is good you can set it on a tailgate or small folding table. A drop down side forms a countertop and interior compartments hold utensils and other necessities just like a kitchen cabinet. A dishpan and soap and extension cord are indispensable. I use instant potatoes a lot to use as is or to thicken can soups and if I'm craving fried potatoes I'll make potato patties if I don't have any home grown potatoes left. I also use a lot of power milk I don't have a oven so I'll make a fry bread using regular flour a little baking powder, salt and power milk I'll usually have with evening meal or a hoecake from cornmeal the fry bread is a good substitute for biscuits in biscuits and gravy a lid is crucial in making the fry bread . I use a 8 in pan with a glass lid perfect for one person. I also made my own flour tortillas with the regular flour and a little hot water good for making breakfast burritos or wraps like you have done

Hi Rebecca. I just tried some of your suggestions and recipes this weekend. Thank you! They worked out so well! I have a suggestion for your channel/ show: Depression/ war time meals. My grandparents raised my sister and I when were growing up and my grandmother showed me a lot of things you can do in the kitchen with very little. Sorta like some of your shows! I grew up on peanutbutter bread, zucchini bread chicken fried stake with homemade gravy. Ex: my granny would take her left over boiled white rice in a vup or bowl and add milk, sugar, and cinnamon. These meals and supplies are also good in an emergency situation. If you have a propane stove or one of the kettles to plug into a vehicle, you can heat up water. That is a whole lot more feasible than cooking a meal.

Some very good ideas! You can get, or save from eating out, shelf stable packets of jelly. You could also use canned refried beans in place of the whole beans to avoid having to drain and rinse.

Sorry this is related to an older video… but I just used your fried rice recipe (I think you used spam) with the “smoked sausage” from dollar tree and it was a hit with 5/5 people in my household… it is essentially hot dog fried rice but it was delicious and perfect for a busy practice weeknight! Thanks for the idea!

I love the recipes you come up with and just so you know, they are also helpful to those of us who are disabled as well ... sometimes even if we have the means, cooking a big meal is not physically possible for one reason or another. You have given me such great ideas for meals when I am having a day where I'm just not able to handle much of anything .. especially when it comes to meal prep. Thank you Rebecca 🥰

This is so creative! It’s given me the idea of putting together the items needed to donate to people living without a kitchen!! I like to make backpacks of necessities for others. I have the blessings of a home and eat well. But I have ‘guilty pleasures’ … those things you eat when nobody is looking. 😂One favorite is what I call ‘potato tea.’ I always keep a container of those instant mashed potatoes you used here mixed with an envelope of instant gravy in my cupboard. When I have that need for salty and cozy, I add a few spoonfuls of the mix into a cup of boiling water and snuggle down. It warms me up and fills my tummy . 😊 Your channel blesses so many, Rebecca! 🤎🌠 You have the gift of teaching, for sure! I appreciate how you get right to the topic and demonstrate so clearly.

Bottled protein or meal replacement shakes are shelf stable and only have to be refrigerated after opening. I recommend them a lot for people who have trouble getting out of bed. Freeze dried fruit is also a great option, especially if you don't have access to fresh fruit. It can be a little pricey, but I can't do the texture of other dried fruit.

On another YT site I learned this, 1 can soup C.Chunky beef vegetable + cooked ramen noodles serves 2 people a hardy meal. The hot water heater can cook the ramen and can of soup. Cook ramen in thermos in water as hot as you can get it with spice packet, about 3/4 of the way thru cooking crack an egg into it, close lid to cook. Common meal in parts of Asia. Walmart does sell 1/2 dz eggs. Especially good for 3-6 people for 1-2 eggs each.

Another idea -- pre-cooked hard boiled eggs. I kept looking at them and rolling my eyes. But I'm recovering from surgery and just can't cook. So I tried a 2 egg pack and was over the moon. I haven't had eggs in weeks! They don't keep unrefrigerated, but a morning of shopping trip and you can do all sorts of things with hard boiled eggs... egg sandwiches, egg on salad, and more.

We have a van build and lived off of tortilla or sandwich quick meals. Another idea is a French press for coffee. Avocados a staple. Packaged tuna, precooked rice also another great idea. Almond milk doesn’t need to be fridged until after opening so we used it for coffee and cereal in the am and bought a smaller size. Chips, we can make a nacho platter. Just a few of our go tos. Oh! PB sandwiches and jelly sandwiches and cheese sandwiches too!

I don't care for the texture of instant mashed potatoes by themselves, but I really like them when they're mixed with other food or topped with gravy. Instant mashed potatoes, gravy, corn, shredded cheese, and popcorn chicken makes a great knock-off KFC bowl and I absolutely love those as comfort food.
