Indians make a similar bread called “lachcha paratha”. Before it’s put to cook on a “tawa”, a pan similar to the flat one that the brother is using in this video, they take the dough and make a long rope like pastry and roll it turning it into itself forming a circle. They repeat this process a few times and each time they will add butter or ghee. Then they fry the bread in tawa (some times in a tandoori oven). It is always crunchy, very flaky, rich in flavor and incredibly delicious. But if they use vegetable oils, (to me) is absolutely horrible! You can buy them frozen in many Asian grocery stores, but they use margarine instead of butter or ghee, which turn them into a crime scene!!!! 😊

Interesting. I’m watching this from Taiwan 🇹🇼 and this is very similar to a savoury snack here called “cōng zhuā bǐng”(蔥抓餅 or literally scallion hand-pulled pancake). It’s a popular street food so you can buy it everywhere. It’s normally served with an fried egg or a slice of cheese and/or other choices of toppings.

Oh I can’t wait to make this. The texture, color, flakiness are so amazing. I do wish the recipe had been written, it took me several times watching it to get it on paper.

Seriously my granddaughters can now make this with me. And enjoy the process ! The only thing evil is not sharing such a wonderful experience with family!

A suggestion, Clarified Butter may be a better option for frying the bread ( Paratha- North India...Parotta-South India) due to higher smoke point. May I recommend viewing recipes of Lachha Paratha and Kerala Parotta. The filling / stuffing is best as per your taste and innovation.
