Once again it's cold outside and I want to stay home! It's PANTRY CHALLENGE TIME AGAIN! My goal is to feed myself and my husband by just using food from our PANTRY and FREEZER for the entire month of JANUARY or maybe longer! I plan on spending NO MONEY for the month. Other goals in the challenge are to use up older (or less popular) canning and pantry food items that are at or near their best before dates or have just hung around for too long. It's my second NO SPEND PANTRY CHALLENGE and I hope that I learned some things last year so that I can better USE WHAT I HAVE, SHOP FROM MY PANTRY and stay out of the cold! Hopefully I'll end up with some MORE creative recipes this year!
In this first video I'll review what I loaded up into the Challenge Pantry and show you some recipes from the last couple of weeks (before and after Christmas vacation.) I haven't bought groceries since my last grocery haul in December!! We had a wonderful family Christmas away and now I'm ready to get right into staying warm by the fire and eating interesting meal ideas! I can't wait to have you join in and share your favourite recipes for me to try!

I made oat milk for the first time this week, going to make an apple oatmeal cake, corn flakes can be used like gram crackers and make a pie crust or a crumble on top of a pie, that gave me an idea apple pie regular bottom crust and cornflake topping, make a home made shake and bake with cornflakes too. or a pineapple pie poured into a cornflake crust. I need to stop looking at food videos tonight LOL

Powdered milk works great in baking! Lentils are great for stretching ground beef. We cook up a batch and then freeze so we can just toss them in meatloaf, spaghetti sauce, chili, anything with ground meat.

Good luck with inflation. Right now, I need to eat some stuff up. Food prices are ridiculous and definitely don’t want anything to go to waste! I think a pantry challenge or $21 a week challenge are both budget friendly things to do. Love them both!

An idea to use your powdered milk even though it doesn't use a lot is peanut butter balls. It is 1/2 cup powdered milk, 1/2 cup corn syrup, 1/2 cup peanut butter and 1/2 cup chocolate chips or, nuts, or seeds. Mix together and form into a ball about the size of a walnut. Enjoy. Do not double recipe, does not turn out.

Hi Jessica, I have really enjoyed watching all of your videos, I love how real you are. My family uses French bread for pizza nights, and we slice them in half and just top them opened faced and eat them that way. They get crispy, but not too bad since you are only having to cook them long enough for the toppings to melt/cook. It's our favorite way to do pizza night.

Awesome start to have specific items you are focusing on using up. -Stovetop stuffing in meatloaf is amazing. Keeps the meatloaf nice and moist and also helps if you are using a fattier cut of ground beef. -Powdered Kale is the perfect addition to smoothies, soups, casseroles, omelets, scalloped potatoes..etc. Greens boosters are a real thing and cost a fortune! You made yours. ❤️ -Skim milk powder may not be to your taste for drinking or on cereal but mix it up and keep it in the fridge and use it for all recipes & coffee. It works fantastic and you would never know the difference in cooked food. The egg cups looked fantastic. I find them so helpful when I am trying to stay on track for breakfasts. Such an easy grab and go. I've never used pastry on the bottom of mine. Great idea. I have a can of crescent rolls in the fridge that's been there so long it's got a few little rusty spots on the metal. Lol. Looking forward to next week.

Glad you are doing another pantry challenge. I really enjoyed your last one. For the pineapple add it to some fried rice. The stuffing is good for a simple layered casserole. Pulled or cubed ccoked chicken topped with gravy then cranberry sauce. Topped with stuffing and bake until desired crispiness. The spaghetti looked great. I like to mix the leftover noodles in sauce and the next day I fry it in butter and top with parmesan, garlic and crushed red peppers. Use some mayonnaise to coat chicken and roll in corn flakes. My mom always made pork chops with sauerkraut and onions. On the stove top . About 20 mins before serving, she would put stuffing mix in bowl, mix in very small amount of water, like 1/4 cup? Enough to stick together but not be wet. Shape into baseball/ soft ball shape. Put on top of the cooked pork chops. Gently simmer until moist and done. Would retain the baseball/ softball shape. Childhood fave, and the ball shape is what made it so good.

Just added sugar a bit of water, cream and rice cooked in broth. It was really good. For your condensed milk and graham crackers I think you could make hello dolly squares. I haven’t made them in years but I think it is a graham cracker crust layered on top with walnuts? Coconut, chocolate chips with sweetened condensed milk poured over the top then baked I think. Tamarind and your onion sauce and your aged tomato sauce and your harissa and black bean sauce mixed together with your left over hot sauces and some coca cola and brown sugar can be turned in to a pretty good BBQ sauce...and that Duram wheat what a gem that's flour is perfect for homemade pasta and pizza crusts..

@@JessicaWanders hey no problem just do like small cups and tbsp or you'll wind up with one big yuck and tamarind is a pretty strong fruit on its own I don't think we have them in my part of Texas but pretty close to boarder towns and they're popular in like north Mexico but I know worstershires tamarind and anchovies so I'm thinking that sauce is Lee and Perrins max that's gotta be strong crap .haha it's your cooking experiment your deal just may need some ant acid..good thing you have a in house guinea pig lol

I know this is old, but you can use black bean sauce on noodles. Its a Korean thing. Also, gnocci is Italian not French. Gnocci is a potato pasta made with potatoes, flour and egg. 🥰🥰🥰🥰

Thanks for the tips! Would you just put the Black Bean Sauce on the noodles by itself or with other vegetables or something?

Hi ! Look up Jajangmyeon. You can use it 2 ways. First, just mixed with noodles.. add cooked slice onions, pork chunks ( like cooked cubed pork chops) and raw zucchini slivers of all things. Second, you can cook meat, either pork or chicken in the bean sauce, add ginger, soy sauce onions and any other vegetables and spoon over white rice. I'm not Korean, but I order Jajangmyeon at a Korean restaurant as take out. The bean sauce doesnt really taste like anything LOL

For your Corn Flake crumbs, Make Simple Corn Flake Chicken! If you have the Companies Coming Chicken etc. Book, this recipe is on page 47. Mix 1/4c melted butter, salt and pepper. Brush about 3lbs chicken parts with the melted butter. Put 1c corn flakes in a bag and shake the chicken in them. Bake at 375 for about an hour. So yummy! I have used Italian seasoning in this also, but it is really good for being so simple.

I'm excited for your 2023 pantry challenge! I love listening to your videos as I prep meals from my own pantry for dinners. I struggled with using up cornflake crumbs too. 😆. Finally used mine up last years as toppings on baked Mac n cheese, breadcrumbs on broiled tomatoes and as breadcrumbs in meatloaf and meatballs. I stick to purchasing panko now and no other crumbs. Lol

Yay! I'm so glad you're enjoying the videos :D I don't usually buy corn flake crumbs but when i do I usually end up using a small amount and have the entire box left over! Jessica you can’t get that broccoli casserole to brown you’re just gonna burn the noodles and burn the broccoli because there’s nothing on there to get toasty.. If you would’ve put the Parmesan on the top before you broiled it you would’ve had a nice crunchy topping but also with the cottage cheese melt and it’s not so lumpy… I’m used to cooking with cottage cheese because I’m Jewish and we make noodle kugel and you kind of want to get that cottage cheese to melt down to make it more appetizing looking

Hi Jessica happy new year, I have recipe for your cornflakes crumbs and marshmallows. For cornflakes crumbs and use some spices and herbs mix and place in zip lock bag and coat your chicken drumsticks and use cooking spray to coat the chicken drumsticks and place on a baking sheet pan and bake in a oven 180 deg for 35 mins. Also with cornflakes crumbs make a cheesecake base. Marshmallow I make rocky road, but ones that you have in your cupboard I would cut them in half. I hope this will help you from down under 🇦🇺👍

Kale powder in smoothies, spaghetti sauce, chili, when it is ground that fine a tablespoon here or there is fine. The stovetop stuffing, I used it instead of crackers in a meatloaf. So yummy. I added an egg, ketchup, a few shakes of Worcestershire sauce and the stuffing mix. It was a tad dry so maybe add 2 tablespoons of water but I used ground turkey so beef might be fine.

So excited to see this video and series! Those cornflakes crumbs could be used in place of breadcrumbs in meatballs. And you could make meatball subs for a fun lunch with leftover meatballs. As for the darker days, I read online this year that Dec. 21st (Winter Solstice) is the author's favorite day of Winter because every day after that is longer than the day before. So now I'm reminding myself every day that the sun will be out longer than yesterday to help me overcome my S.A.D. this year.
