Ash Kardeen is a type of nomadic soup that is cooked in the southwest of Zass, especially in Lorraine regions. In cooking this soup, a special plant called cardin or karde (trumpet) is used. As its name suggests, this dish has different cooking methods in different regions. From fermentation methods in Kohgiluyeh and Boyer Ahmad and Chahar Mahal Bakhtiari and Khuzestan to cooking with meat in Euclid, Fars province. This soup is known as Kardin (or Kardim) in Chaharmahal and Bakhtiari, Isfahan and Khuzestan regions. Karde plant is found abundantly in the Zagros mountains. Its growing season is winter and the first two months of spring.
