Prickly Pear cactus is awesome. Make nopales from the pads and jam or wine from the pears. Takes a little bit of work, but damn is it worth it.

That's what I'm thinking... when you have this you get a LOT of it! I sometimes pick a bunch of them and take them to a Mexican restaurant, maybe trade them for lunch. I just can't eat it all.

I’m in India 15 years now.it’s hard to find Mexican ingredients here. But I’ve picked some pads, growing wild , and today I’m planting tomatillo seeds .hoping to resurrect my old Cantina Mexicans from the old nineties in UK festival circuit if tourists return! This looks like a good standard recipe as you say. People who grow this stuff need help, it just keeps coming! I just have a few plants and probably harvest over 100 pounds a year. So, you never run out of Nopales, you just have to find something to do with them. The slime is a problem for some people, I find that cooking them like this in a hot pan seems to dry it up, and its' sort of glazed. Thanks!

We eat our N.cactus just cleaned, in little pieces in salades, and every week we make a smoothy with this and cactus and oranges. We are looking for more recipes with N.cactus .... just nog cooked or heated as we use this for its nutrients;

The tribe likes to chartoast the paddles on a griddle first, gives it a smoky quality Seems to keep the slime stuff to a minimum. We sometimes use parsley cause we are cursed with a gene that makes cilantro taste like...well, it doesn't taste too good. We do the rest the same but skip the eggs and tomato. Just a family preference. Kathy Macias below mentioned spinach low carb tortillas, sounds good as a wrap.

We just bought a house in the Mohave Valley of Arizona, and the homeowners told us there’s a cactus in the back yard (I haven’t seen it, my husband did) that the neighborhood women come over and pick the blooms in the spring and make jelly/jam. They wanted to be sure whoever bought the house would let them still do it. Of course, they share the jam. Do you know what kind of cactus it would be?

It's the same one! They have edible fruits, you see them in markets. Full of seeds and with spines on the outside so they're a little challenging. Some Korean people showed me to chop the ripe fruits up roughly with a big cleaver, then soak that in water (macerate it) to make a nice drink. Just strain out everything and you have a kind of purple Kool-Ade.

Don't worry! You can eat this raw, there's nothing poisonous about it. I cook them in a hot teflon skillet or wok, high heat and a lot of motion. A lot of goo comes out but it presently dries up and there you are!

Make it better. Huevos y nopales con chicharon. (Eggs, cactus, and pork rind) Steam the chicharon to soften and add to the huevos y nopales. YUM!
