To make home made noodles/pasta we'll give this ratio for 2 people's lunch (pls adjust for smaller/bigger number of people)
200 g maida/wheat flour (or mix of both)
2 eggs
2 yolks
salt for taste
Sift the flour onto a kitchen table, form a mound. Add salt, put eggs and yolks in the middle, add little of olive oil and gradually combine the ingredients, scooping the flour into the middle.
Knead a smooth and elastic dough, form a ball. Wrap in foil and set aside for about 1/2 hour.
Divide the dough in half and roll it out one by one, dusting it with flour. Divide each cake in half, dust with flour and place both halves on top of each other. Prepare noodles using a pasta machine. Or roll the dough up and slice them if you don't have a pasta/noodle maker machine. Scatter the noodles on the table. Repeat with the second part.
Boil and salt the water. Cook the pasta until al dente. Vegetables/eggs/meat as per your preferences.
