Bake at 350 Deg. F for 45 mins
2 tbsp golden ray / butter
2 tsp Avocado oil
1/2 cup onion diced
4 pimento peppers diced or jalapeños
1/4 cup celery chopped fine
1/4 cup shredded carrots
4 scallions chopped
1/4 cup bell peppers diced
1/2 tsp salt
1 tbsp minced garlic
1/2 cup corm
2 cups chopped spinach
1 tbsp green seasoning
1 tsp all purpose seasoning
14.75 oz Creamed corn
12 oz can evaporated milk
2 eggs
8 oz fine corn meal
1 cup pepper jack cheese / cheese of your choice
3 tbsp coconut milk powder
Couple Ritz crackers / Dixie
1 cup pepper jack to top / of your choice

I do mine almost the same with the exception of the crackers, which I’ll definitely do now. Sometimes to avoid lumps I mix my cornmeal with a little water to soften it up. I learnt that from making your coo coo recipe ❤

I made this for Mother's Day it was really nice but I added 2 cups of cornmeal instead of 1.
