He uses "Pâtisserie" to describe his profession of creating Pastries. The French terms are used for every role of the kitchen brigade, aa standard everywhere in the gastronomy world. Seeing the level of finesse he performs his profession with, everything below Master would be disrespectful to adress him with.

Surprisingly easy so long as the facility is well refrigerated, or if the pieces are put into special refrigerated display cases. Wouldn’t be the hardest thing to do, but pretty pricey I think lol. Maybe in Vegas or something
