@@ForeverLove69 I finally found and bought one just this size and thickness on eBay. It was from a merchant in China so it took a while to get to the U.S. This one is a thick "Chopping cleaver" as opposed to thin stock slicing cleaver for vegetables and such. I use both. Don't make the mistake I did and buy a thin slicing cleaver and try using it to chop up a duck/goose. You'll likely chip out the blade. If you get a thick chopper like this one and keep it very sharp, it will also slice just fine. Mine cost $28.00 I think.

Should cut the meat first to impress customers, instead of turning back to the skin first.By doing so , sure the skin will peel out which doesn't look nice .Be decisive to chop instead of small cut several times at the same spot.TQ
