The 5 flavours you described is the old Asian flavor nomenclature. It originates from the Indian Ayurvedic system. Pungency is a type of "spicy", like the heat you get from fresh cut garlic, horseradish, ginger and wasabi.

Pungent usually is used when talking about things that has been left to ferment. Most people use it negatively but that's not completely correct. Pungent equate to overpowering and strong in smell or taste.

I wonder if that's the berry they use for the "flavor tripping" candy tablet things. Supposedly you let it dissolve on your tongue and it changes the flavor of stuff pretty drastically. I could be very wrong, but it seems in line. Sour stuff tastes super sweet, sweet stuff can taste sour or salty...I haven't thought about those tablets in years 😂
