Rachel is heading off to Northern Michigan for a weekend-get-away with her girlfriends. However, the garden didn't get the memo. The food just keeps on coming and coming. So in this video, we'll start before her work day begins (yes we both work full time jobs) and wrap things up around 9:00pm or so. I make up a bunch of jalapeno poppers, flash freeze on a cookie sheet then vaccum seal in portions for your family! Oh so good!! Love all your recipes!

Def borrowing this idea! We love to eat them wrapped in bacon for football season. This would be such a time saver...do you let them defrost the night before you want to bake them?

I love this idea. We can't do super hot jalapeños here so I've been picking the nadapenos cut in half length with about 2 to 3 regular hot ones. We love the flavor combo of the pickled jalapeños with the cream cheese(blended with cheddar and bacon bits) and rolled in the crumb mix or drakes mix batter. But I'd have to make them alone lol. My family doesn't leave any left overs lol Oh we've also made them with a whole shrimp in the middle too. Thats a weird but yummy flavor combo.🤣

Just spent 30 minutes cleaning up my flooded kitchen. I made some tomato powder and was washing my dehydrator trays in the sink. Forgot about it u till my son runs into my room to tell me. Ready for a break from preserving food!!!

I’m dehydrating 150 pounds of onions ! Also pressure canning chicken and corn ! I’m happy to be able to preserve anything this year! My garden did nothing ! I got blessed with the onions and found a deal on the corn! I bought the chicken so I have some on my shelves:)

Hey Rachel! I have made your pineapple zucchini, pizza sauce and spaghetti sauce. Ty so much!! I borrowed a roaster and made the pizza sauce and spaghetti sauce in it. Great idea using the roaster because it frees up my stove and it’s large enough to do double batches! I have also made Rotel! Lastly, I’ll be making your bar-b-q sauce. You have helped me tremendously this canning season! Ty so much for sharing your harvest and canning recipes! Love your channel! 💕❤️

I love my kitchenaid food processor attachment. I just wish the mouth of it was larger, but I make it work and I love how uniform it makes everything. I make my cowboy candy like relish also 🙂. I used Tricked You jalapenos for a mild cowboy candy, so the leftover brine was very mild. I boiled it down to a syrup we used as a dipping sauce for chicken tenders. It was very similar to sweet thai chili sauce, delicious!

I use my leftover "cowgirl candy" marinade to make spicy pickled eggs, pickled beets, and pickled sausages. Yum!

How dead tired you are really shows in this video. That's not a bad thing! We can only get ahead if we push ourselves, and as you said, that's when the blessings come! I admire you for your hard work with no whining. LOL, my family would be listening to me moan and groan! 😁 You said you will be relaxing in October because of your works now, so here's to you Rachel! I totally understand, the other day I had two of those roasters going with green tomatoe salsa Verde and a third one with red tomatoes for paste. I also had 40 pounds of peaches to get done and like you the zucchini and squash. Thank you for sharing your pineapple zucchini recipe I opened a jar last week to see if I wanted to make more and we loved the zucchini bread muffins I made with it. You inspired me in my canning this year. 🤠

Thank you for being there for me too! I just got a roster from are thrift store ($15.00). Put Tomatoes and onion and garlic in last night for canning of sauce! 😋

I made a tasty tomato sauce. I first cut out the stems out of the tomatoes. Cut the bottom of the tomatoes with a x. Then added them to hit boiling water. To peel the tomatoes. About 20 minutes. Then stick in cold water. Then peel. Then put in back in the empty pot which has the boiling water in it before. Then in a frying pan added cut up colourful peppers, added cut up red onions, dry them in butter or margarine. Then added the cut up peeled tomatoes in the pot. Added Clubhouse Italian Seasoning with the red lid only contain dehydrated vegetable peppers instead of pepper spices. Garlic powder, onion powder, celery salt, & rosemary. Blend them all together. Then added to washed clean jars, & lids,. Then either put into canning hot water bath, or stick into the fridge. After a few days, I used the one 500 ml jar. added it over penne noddles, the add to casserole dish. Added shredded marble cheese, melt in the microwave until melted, about 3 minutes. Then serve, this was really good.

Girl...I understand this. Just yesterday I was up over night...all night. We were supposed to be hit with hurricane Henri and lose power. I had a batch of your spaghetti sauce going and was up to my eyeballs in peaches from our tree. It all needed to be processed and I was panicked. Well...God blessed us with a reprieve and Henri missed us. I finished more peaches today and start sauce or salsa tomorrow with yet more tomatoes waiting to be processed. You are an inspiration and it helped me so much to hear you say, "Come fall I'll be sitting in my comfy sweatshirts watching football." lol. Sometimes you need a reminder that it is only for a season and then you get a rest.

Haha, the zucchini that got away. 🤣 Been there, done that. They're sneaky bastards, like cucumbers. One day you can harvest everything in sight, and a day later you're like "crap, how did I miss those ones". Oh, and Cowboy Candy...love that stuff! I've been making it for years. Who doesn't like candied, pickled peppers? I can the leftover sugary brine and use it to marinate beef, pork, seafood. Srsly, Cowboy Candy juice is amazing. I just did some prawn skewers a few nights ago that were incredible. 😋

Most of our harvest is over here in central Texas, it's very hot. Peppers are the only thing still producing. We filled the food pantry to the top. We will be planting the fall winter garden over the next two months when thing cool down. Great thing about Texas we can grow most all year. I bought a roaster and cant wait to put into use. Oh girl, I know that face! It's a mixture of exhaustion, thankfulness and a bit of "am I done yet?" I'm right at that place too. Yes, when you're snuggled in this fall and winter, all this hard work will be so worth it. :) Hang in there! Watching your videos have helped me to keep pushing through harvest and preserving season. Yesterday was canning more tomatoes and green chilies and today was fall planting. I'm tired, but so thankful for the bounty that has been coming in. What a blessing to look at the pantry and see the goodies to be eaten, shared and gifted. Thank you for taking the time to share all that do with us. I truly appreciate it.

Have Todd throw some poppers on the smoker! I prepped a bunch before we had our baby (last Monday) and it’s been so nice to just pull them out and toss on smoker with a chicken or whatever! I make a brown sugar based rub with cumin, chili powder, cayenne, oregano, onion/garlic powder, salt pepper, add a little of the rub and some shredded cheese to a brick of cream cheese, stuff halved (seeded) jalapeños, wrap in bacon, then roll in more of the rub… set smoker at 250 and cook about an hour. You can do them on a regular grill also, even at a higher temp. We flash freeze on cookie sheet (prior to grilling) and then bag them up

What a productive day. Good for you. I would suggest that is you reuse cowboy candy brine from a previous batch that you add some vinegar to it because the previous batch’s jalapenos will have released their liquid in the brine, therefore watering down it’s acidity potency. Tfs.

Lol my table is the same right now! Glad it's not just me! :) I was able to get the peaches that were going bad that I got at a discount pealed and sliced yesterday so I can make peach jam but got zucchini, tomatoes, peppers and beans to deal with too!

I bought the KitchenAid food processor attachment because of the video that you and Todd did with the Cowboy Candy relish. I made the Cowboy Candy relish recipe you used on Friday and the attachment was a life saver and the recipe turned out so good. I used Nadapenos instead of regular jalapenos because my plants put out so much this year so just picture the recipe but without any heat. Turned out amazing. I store my attachment in the box so I understand what you're saying about having to bring it out since it doesn't sit on the cabinet but it is an awesome and powerful little gadget.

We too love peppers! Candy n sliced! One year I had so many to can on the weekend that I blistered my lungs! Please take breaks n use exhaust fan on high. Now I sat a fan by the window n pull fumes out! It was a good 2 weeks before I felt better! Lesson learned!

I did 10 half pints of cowboy candy 2 days ago!! The syrup is hot. Hope it calms down. I wore gloves and my hands burned for hours, even after using lemon juice, then baking soda. I bought cucumbers to do pickel relish.

We had a parade in our small town Saterday. I filled my 'free table' with squash. Thank goodness it all went away. I love my garden, but also over it.

Next year should will be so grateful that you canned everything since I believe you will be letting your ground rest in its 7th year. This has worked so good for us.. After taking a break in the garden for the 7th year. We started two years ago planting our garden in June. With that said our tomatoes are just starting. Really glad i found this channel.it It is SO HELPFUL and encouraging for me to know you both work full time jobs. I go back and forth with expanding my garden, preserving more food, doing more with my property because i work full time, and am single.maybe other pages I follow work full time outside the home as well, but I get the feeling that they don't. This encourages me a great deal! So thanks! Gonna try the pizza sauce and definitely gonna try the pizza buns!

You so inspire be with growth. My garden had jalapeños and green peppers. Made a meat tomatoe sauce with cheese and baked for lunch yesterday. It's just your inspiration to keep trying new things and use things I GROW to make meals.

I have the same thing on my floor of my kitchen as your table. I just made swiss steak tomato sauce yesterday. Turned out great. Also canned up my carrots from the garden and did them in a brown sugar/ruby red grapefruit juice. Yummo! As I'm allergic to oranges. Couldn't use the orange juice it called for. Found a site that showed canning shredded zucchini. Did that. Also showed canning shredded carrot. Did that. Have baby corn to can today. Also have more ripe tomatoes. Will make more of my Swiss steak sauce. Never ending!

Hey!! I’ve been watching your channel off and on for over a year now and I gotta say I’ve been really impressed with your content this year!! You’ve given me some great ideas on using tomatoes for canning plus all these squash!! I really want a kitchen aid but gotta save up the money. One day…lol anyway I know you shredded the squash and I think you’re freezing it for later? I wasn’t clear on that. Hope you are having a great trip! Would love to have tomatoes like that. In my area we have 50° nights and 95° days and the tomatoes don't seem to like that. Sometimes over abundance is good.

So, jealous! Our garden hasn't produced much. We had frost in June and 25 days of rain in July so no such luck with produce in a year when we really needed it. The beans loved the weather but not the squash or tomatoes. Have a great get away!

I'm hoping for a long warm fall as my tomatoes have really just started looking nice but I agree on the beans. Our freezer is looking nice with beans lol But I pruned and pinched back my pole beans according to a different youtubers advice and I planted less plants but have more beans so I think her way is working. Plus no giant over hanging mass of tangled mess lol. They just put more blooms on this week.

I am in the thick of it also. I have canned more pickles than ever. Dehydrated more zucchini. My Tomatoes are just really starting.
