I gained 3 pounds this week too 🤸🏽♂️ I really like how chaotic this video was! I don't know if you've made Swiss Meringue before, but I prefer it over Italian since I only have a hand-mixer and pouring in molten syrup makes me sweat. Swiss might also be nicer even with a stand-mixer since you can do other stuff during the cooling phase. Did you consider Blackberries instead of Blueberries for this recipe? They're also purple but less sweet (you mentioned being worried about the total sweetness of the dish). The seeds are a pain, but the Internet tells me there are seedless varieties.

I've done a ton of research before settling with an italian meringue (cause I don't want to waste ingredients) I dont think I had a problem with it, it was really this damn custard that i gotta tweak *cries in the inside*. I don't get blackberries anymore cause I've had blackberries in my smoothie mix and yes the little seeds are not fun to eat! I didn't know there was a seedless variety, I'll have to look it up too!

Most people add corn starch to custard/pastry cream. You can technically make it with just eggs and milk, but it's very difficult to get the right consistency. There's really no reason not to just add some corn starch and make your life easier.

oh yeah im very aware of the corn starch, custard is my favorite food to eat! i saw this famous french man make it without it so i wanted to try :P

Next time, if you use a torch to toast the meringue tops instead of putting it in the oven, you can avoid heating up the whole pie and loosening up your custard. Great job, though. I followed along on IG and saw how long this journey was real time. You worked hard. It sounds really tasty and makes me want to try making chai custard, too!

I don't have a torch :'( I also wanted this to be approachable to people who don't have one I honestly dont think the custard would have set either way. Ive seen this custard be put in the fridge and comes out fine after being put in the oven. It's too bad in my case I need to readjust somewhere, a project I'll start later on Thank you so much, can't wait for more of your input! I'd love to see how you view things on later projects, and yes it's delicious! I'd love to tweak it then share again :')

@@IssaGrill That’s understandable. And I’ve had my fair share of custards that didn’t set properly, too. Sometimes it’s the recipe, sometimes it’s the ingredients. I might not always comment, but I’ve seen all of your KZfaq videos and most of your IG short vers. I always look forward to your content and can’t wait for the cookbook.
