The Leva extracts much higher numbers (because of the hybrid spring/pump) so the extraction is much even. So the citrus notes you are tasting are covered by other compounds from the higher extraction. The more crema/oils can also coat the mouth more so you dont taste so clearly the floral/citrus sour notes. It's like having a spoon of olive oil and then drinking an orange soda. The lower bottom can be enjoyed by some while others hate it, it normally means heavier notes, up to spices, tobacco, biter notes. The commercial pump machine even with profiling can't do what a spring lever does. I've pulled on Leva some shots, and the top 3 machines right now are for sure the Leva, the KVDW speedster idromatic (since hybrid spring) and the Vesuvius Leva (hybrid spring). Hybrid springs (that have a pump) so you can modulate the preinfusion are a must now, a classic lever can't do it. Great session, I would like to know more.

Denis - Great insight and the olive oil/orange soda is a great way to describe it. After visiting Greg and thinking more about the experience as I've been assembling these videos, I'd like to get more in-depth with the Leva to explore it more fully. That was a lot of espresso! Thanks for posting the video. Fun to tagalong during your visit. My EG1 is on the way with core and ultra burrs. I think the ultra burrs is what Greg was talking about regarding low fines/uni modal burrs. I’m using it for pour over now until I get my espresso machine next year.

Great videos, that is amazing the difference you got from the combinations of EK43, EG-1, LM Leva and NS machine. Did you guys get to try it with conical burrs too off video? That is ALOT of espresso shots

The variations were really intriguing! We were not able to try it with conical burrs. I've pretty much included most of our session - and we drank quite a lot of espressos! Thanks for watching!

Ylo! Always good to see you. I think overall, I prefer cappuccino over latte. For me, I like the more balanced coffee-to-milk ratio.

Awesome videos, so much good topics! I have a question about extraction times as I could see they are much different… sometimes LM Leva does 28 seconds for 40g, other times it goes 38 seconds for 40g… i would suppose that shorter extraction shot is much more acidic and the longer shot much more bitter? At home I feel the difference of just 2 seconds longer extraction (using Rocket R9 one).. thanks for reply!

Hi there: My experience with the Leva at the time the videos were done was pretty limited. I've since learned to look at the bottom of the filter basket and apply full pressure when coffee begins to appear at the bottom of the basket. This improves shot time consistency a lot, and now its on the order of a couple of seconds. 10 seconds is a good chunk of time, and if I get that much difference these days I go looking for the reason. 2 seconds shouldn't matter that much i would think.

Hahaha, it certainly could have been a problem! But I'm usually okay to sleep since I do a lot of coffee tasting for work. However, I don't recommend doing 15 shots in one session! Thanks for watching!
