Every time I hear about the ortolan, I think of the scene from American Dad where Francine drowns the bird.

I will never eat Ortolans because I find it cruel what they do to them, though I'll admit Alicia has a point when she says that it's better to eat them properly than go at them like cannibals (same with any food I imagine) and with what she said about bad table manners.

It's a shame that Ortolan are so rare these days (and expensive). The best and most classical methods does take some time. Pluck the ortolans eyes out, and lock it up in a box filled with millet, figs and grapes (purple, not white). When it reaches about four times the size, drown the bird in Armagnac, plug all the feathers and set fire to it in a pan. Within a few minutes (about 8) it is done. It is generally eaten whole, though most usually bite the head off first. I can only recommend it to lovers of good food, though vegetarians should better stick with eating tofu and grass.
