OUDERWETSE JAVAANSE LAPIS / KUE LAPIS
Ingredients:
100 gr sugar
1/2 tsp salt
1/4 tsp red food coloring
100 gr tapioca flour
100 gr rice flour
250 ml water
200 ml coconut milk
tapioca flour
rice flour
salt
mix
add the sugar to warm water to dissolve
add the coconut milk and stir
add the coconut milk to the flour and mix
use a sieve and devide in two bowl
add the food coloring in the second bowl and mix
prepare the steam pot and check the size of the bowl
lightly coat the inside with oil
place the bowl in the pot and add the first layer
always stir before using it
close and let steam for 3-5 min
add the second layer - steam 4-5 min
add the third layer - steam 5-6 min
add the fourth layer - steam 5-7 min
add the fifth layer - steam 6-7 min
check the firmness
add the sixth layer - steam 6-8 min
add hot water to the pot if needed
the lapis is done when fully steamed
remove the steamer
let cool
coat the knife with oil
coat the top with oil
go around the edge with the knife
fold it over on a cutting board covered with plastc wrap
cut in pieces
