Ingredients/Instructions (didn't measure ingredients to precision; just use a generous amount of everything) Mustard (I like honey mustard) Medium onion Piece of ginger (small) Lime juice Oil (about 1/4 cups) Salt Spices of choice (generous amount) - black pepper, paprika, cumin powder and thyme For bbq mix: Bbq sauce Brown sugar (also for first baste;mixed w lukewarm water ) Honey Marinate for about 30 mins to overnight Bake at 300 degrees Fahrenheit for 2 and 1/2 hrs covered; then increase temp to 350 degrees Fahrenheit and uncover for the rest of the cooking time. Use mixture of lukewarm warm water and brown sugar as first base then pop it back in oven for about 45 minutes ; remove from oven and apply the bbq sauce mixture (I like to do both sides starting with the bottom side first). Broil both sides for about 5 to 10 mins each (especially on the meatier side). Finish with another coating of bbq sauce mixture . Hope you enjoyyyy 😁
