Dear Chris, I love love love your videos. Those other fancy cooks think they are so special but you are the one that is special. I wish you were near me and we could be friends. I love you and use your recipe videos all the time. Today I am making Turkey necks in your mouth watering gravy. I am 76 years old and one of the only things I can still do is cook and you have made that an adventure for me. Love you so much. Janetta in Conroe Texas.

I made this two days ago: four 2" thick oxtails (only 2 of us) by your recipe. Cooked it in an enameled cast iron pot on my stove, using your ingredients and spices (tsps). It was delicious, tender meat, wonderful gravy. Served with white rice from my rice cooker. Thank you for introducing me to the flavor of oxtails!

chriscook4u2 Thank you. I haven't seen platefuls like yours since I was a little girl post WW2 when my mother had Uncles and Aunts, the 5 of us, and more over for New Year's dinner. My 300-pound uncle had piled two inches high of roast pork, sauerkraut, mashed potatoes, stewed tomatoes, apple sauce, sweet potatoes, etc. My eyes bugged out, but he finished it all. Good memories. All generations have special memories of foods, and I really enjoy having found down-home cooking recipes from you. Sharing food recipes on KZfaq is one of the best things that could happen. I've got 4 oxtails (only 2 of us) ready to cook tomorrow because of your channel. Wish me well!

My mom uses those large Ziploc bags to flour her chicken and other meats because those "Walmart" bags or any grocery store bags they will break. I'm making oxtails right now, but I smoke mine on the smoker first for 2 1/2 hours then braise them in a braising liquid [I make myself] in the oven for at least 3 more hours or until tender. I used cornstarch for my thickening agent instead of flour since I'm watching my carbs. Love your videos! You really explain every step and that is so important plus you also explain the WHY, too!

GizmoBee1702 One question, using a tsp of each seasoning for your amount of ox tails didn't make them to spicy? Serving them with rice was the perfect way to go. I am so happy you tried it and enjoyed it. Thank you for the feedback.

Chris Mcmillan No - not too spicy, but then we like our food "smacky-mouth" and flavorful. Chris used tablespoons. Making it on the stove in a lidded cast iron pot worked for me: I could slow cook it and watch it. Tender meat and gravy; didn't add potatoes.

Hi I just want to thank you. This is my first time making ox tails, and when I tell you I followed your instructions step by step I mean I watched the video and made it exactly how you did. It came out absolutely wonderful, it was tender, tasty and everyone just raved about it. I love watching your videos and your recipes are out of this world. My mother and wife were both amazed and commented that this was the best oxtails they ever had. Hats off to you. Sincerely, Mr. 300 C
