He passed away a few years ago. He was a folk singer, short story writer, painter, Vietnam helicopter pilot, etc. A SUPER TALENTED GUY!!! Please google him, and let me know if you have heard of him. I don’t think there’s anything better than oxtails, and I love your recipe! I cook them for five different ways. I do have a suggestion for you though. I like to eat oxtails the same day I cook them so I take the oxtails out of the pot And a gravy separator to get rid of the fat. If you don’t have a gravy separator, use a Ziploc bag, cut off the corner for the fat in the bag. The fat will rise to the top and so you will watch all your good stock will come out first and you put that in a bowl and then when it’s done and there’s only fat left, you can do what you want with it. That way, you don’t have to deal with serving people a big coating of liquid fat. Thank you for a gear recipe, I enjoy you very very much!
