More knowledge at 63 yrs.......love it, I learned about the parentheticals today, I've always been able to read them (knowing what it meant) without knowing why the different shapes were there. I am one who once I know why you did something, I can then understand. Great explanation Pam. FYI....you mentioned the flour and liquid question........your videos are teaching and reminding us all to become "thinkers" for ourselves and not just followers. And of course the question shows we are listening. You and Jim are giving newbies etc something so much more valuable than money, knowledge that will apply to so many areas in life.......nice job you 2!

Oh my Goodness! This is absolutely the best information regarding canning purchased meats, thank you so much. We love meatballs and spaghetti, so this gives us a variety in my canned items.

Thank you for answering the "safe" question. I had a ton of siphoning when I canned mine. I used cool beef stock to add to my thawed/room temp meat balls. I heated up my canner slowly, about an hour to start the 10 min streaming. I thought I had it beat, ha, siphoning. All the jars still sealed and gave them the spoon test. Just how it goes sometimes. Certainly not throwing them out. Dinner tonight. Thank you for the Vlog.

Thank you so very much for coming back & addressing the questions. I was so happy to see the possibility & I, too, was trying to wrap my brain around doing this. I dearly love the taste of frozen meatballs (over my own lol) I`ve been thinking about this ever since watching the original video..and my brain kept saying (whether right or wrong)..it HAS to be ok..the meatballs are already fully cooked. My thinking was to go ahead & gently heat the meatballs till heated thru (not cooking) then canning them with hot broth. Now that you`ve explained it as well as you have (especially HOW to read the ingredients list, I`m definitely going to can some. I feel very comfortable doing so. This is greatly appreciated!! :)

Thank you for the explanation and teachings. I've always been able to read the ingredients lists and understand them as you described but it's been instinctual for me. Or if I learned it, it was so long ago that it's just habit. It was neat to refresh that thinking process. Thanks!

Oh Pam! The meatballs made a wreak of my freeze dryer! I didn’t see your end results. I used frozen Costco meatballs, I don’t typically freeze dry high fat items... I didn’t realize how much fat would be in the meatballs. (Never used them before) The problem isn’t just the mess, it’s the contamination it causes, and can ruin the pump. Contamination can cause grief for all future freeze dryer loads. I love that you teach people, I love your spirit, I love your that you’ll own up to mistakes. Keep teaching people skills to be self sufficient! Blessings🙏

For goodness sake. That did not happen to us. We also used Costco and put them on the trays right out of the bag--they were frozen. And they seemed to be very low fat even after we rehydrated them. This tells me that Costco uses different meat packers to do their frozen meatballs and they are not all the same. I am so sorry that happened. We had fresh lemon juice make a terrible mess of our freeze dryer, so I know what the clean-up involves. Wish I were there to help you! I will certainly thaw and test a sample from future bags that I want to freeze dry and avoid the higher fat ones.

It’s not your fault, I’ll be more cautious going forward. I’ve seen people put paper towels over meat item they were concerned about.... I was so excited to take frozen to freeze dryer as you know it saves freeze drying time. Blessings 🙏

Miss Pam, Thank you for addressing this so completely. I've been canning for a while and my GF and me are branching out to many more items other than veggies. We've been having a lengthy discussion concerning safety and what is "appropriate" (for us). Your method of covering the procedures, process and questions are so much appreciated! Thank you for clearing this up for those who were concerned. I felt they were good questions but felt that they meatballs each would not have had enough to cause a problem. If they were homemade they’d probably would have had eggs as a binder then that would be a problem. I appreciate you bringing these out of the box ideas. I don’t think I would have ever thought to do this. Look forward to more ideas especially to clean out the freezer.

Pam at some point I would enjoy hearing about syphoning while canning. What is it?, how and why does it happen?, and should it concern us? Thanks for your detailed , yet concise lessons.

I prevent that by letting the canner cool down, and leave for another 20 minutes, I then open lid but leave it half on for 10 minutes, and then I lift my jars out

@@CraftEccentricity - thanks, that makes sense. I had siphoning once. I believe it was because I opened the canner too soon, before it had cooled enough. Leaving the heat on will keep the temp of the jars at max, maintaining their vacuum when the lid of the canner is removed, releasing the pressure in the canner.

You are the best teacher ever !! I mostly figured that the meatballs were thawed but i did question it at the time of the video. I don't remember ever being told what all of those bracket things mean . Wish all teachers were as cool as you !! You are the BEST canning teacher.

Pam, I put my noodles in dollar tree paper bags before I vac seal my noodles. It works great, no piercing of the vac bags.

I wonder if canning them made them more tender? I don’t care for frozen meatballs as I find them too dense. Hoping canning them made them more tender.

I've made a LOAD of meatballs that include rehydrated dehydrated veggies. I bake them for 30 minutes then PC in broth or V8 juice. I sampled a couple on the first run & found they were tough as old hide, thought I had a bust. But after processing? They're AMAZING - very tender and moist, and full of flavor.
