Authentic Goan jackfruit cake / pansacho Dhonas❤️🤤
Every Goan's favourite pansacho Dhonas is a village style cake made on firewood/ chulha using ripe jackfruit pulp, coconut, jaggery, etc
Do try this delicious Goan delicacy before the season ends and let me know how it turned out for you
Steps to follow:-
1. De-seed 2 cups jackfruit pods and blend them smooth in a mixer jaar
2. Dry roast 2 cups of ukde tandul (local Goan rice) for 5-6 mins on medium flame and blend into coarse powder. You can even use semolina / rava. Just dry roast semolina for 4-5 mins till golden brown in colour and keep aside, do not grind it.
3. Take 1 cup of grated coconut and 1 cup of grated jaggery and grind into mixer jaar by adding 1/2 cup of water, jeera, turmeric and cardamom pods
4. Add rice powder or semolina to the jackfruit pulp and mix well
5. And blended coconut jaggery mixture and mix
6. Add 1 cup of water and adjust the consistency
7. Take a pan and greese it with oil or ghee and add the jackfruit mixture to it
8. Layer a banana leaf or aluminum foil on top
9. You can cook this in a pressure cooker for 20-25 mins ( remove the whitstle)
Or cook in a kadhai for 25-30 mins.
10. Let it set and cool for 1-2 hours.
11. Demould using a knife and cut into slices.
