apad Ki Sabzi, the Popular Rajasthani Curry Recipe is very quick to put together and tastes super scrumptious.
Ingredients
Papad - ½ cup
Tomato - 2 (ground)
Green chilly - 1
Ginger - 1 inch piece
Oil - 2 to 3 tbsp
Green coriander - 2 to 3 tbsp (finely chopped)
Dry fenugreek leaves - 1 tbsp
Cumin seeds - ½ tsp
Turmeric powder - ¼ tsp
Coriander powder - 1 tsp
Red chilly powder - ¼ tsp
Directions
Getting ready:
1.Roast or fry the papads first on flame or microwave them for 2 minutes.
2.Take curd in a bowl and add ½ cup water into it. Whisk thoroughly.
Making:
3.Heat 2 tbsp oil in a wok or pan and splutter cumin seeds first. After this add asafoetida, turmeric powder, coriander powder and dry fenugreek leaves and sauté for few seconds.
4.Then add tomato-ginger-green chilly paste, followed by red chilly powder. Now let the masala simmer until you see oil leaving the sides of it.
5.To the masala now add 1 cup water, cover with a lid and let it simmer.
6.Next add curd in little proportions after the gravy simmers. Stir and keep stirring until you see gentle boil in the gravy else it can coagulate.
7.Now add some salt, green coriander, papad chunks to gravy. Cover and let in simmer for 2 minutes on low flame.
8.Sabzi is now done and ready.
Serving:
9.Transfer it to another bowl and garnish with some green coriander sprigs.
10.Serve steaming hot with and Indian bread like chapatti, parantha, rice or naan.
11.In fact you can also serve this heartwarming curry with plain rice or jeera rice.
