This is how usually every street food place in Mexico cooks their food. The sides is to keep either enchiladas, flautas, tortillas , or the already cooked beef for the tacos warm. Amazing. 😋

You don’t know how much I wanted a grandpa when I was little to show me stuff like this. Instead I had my papa who showed me stuff and I’m still thankful for everything he taught me. I still would have loved to have met my grandpas but they both had passed by the time I was born. She’s very blessed to have you and you are blessed to have her. God bless both of you. Great “campesino” cooking. Same style of cooking in the South of Brazil, among the Gauchos. All the clean air you could handle, the smell of grass and cow patties in the wind end the song birds in the background. Love that you keep your grand daughter involved in the process. Used to do the same with my son at the same age and now he can fling a darn good “almuerzo”. Please keep on the good work.

Papa Tex, the disc is called a disco. A disciada is a dish of chicken fajita, beef fajita, sausage, pork, molleja and chorizo all mixed together. I like what you did tho. I will definitely have to try that. Mmmmmmm mmmm

y'all enjoy your breakfast! I remember when I was her age, dad would have me help make breakfast, corn beef hash, sausage or bacon, he liked fried eggs, fried potatoes and either biscuits or butter toast in the oven... I was picky but I'd still eat all my plate to make him happy,, but I'd give him my egg yellow to dip his bread in. he can't get around too much anymore, but now I'm inspired to make him an old fashioned breakfast like that sometime soon. thanks so much for sharing!💟
