What I like about Lucy's dad and step mom is they are fully 100% in the moment. They are always asking questions, taking photos, smelling, describing flavors - they are really savoring and enjoying every moment. People should learn from that. Just slow down and enjoy what you are experiencing each day.

I live here in the Philippines but lived in UK most of my life and I used to buy pig's cheek ( and trotters ) in Morrison's branches in the North East .

Chicken Adobo is my too go dish but I’m glad your parents enjoyed authentic Filipino food. I know Lucy cooked Filipino foods a couple of years ago in England and the parents tried it but now they got the real thing.

In my stay here in the UK for almost 6 years now, I meet people from here who have been to the different islands of the Philippines. They enjoyed every bits and pieces of their stay there. Originally Sisig and Beef Salpicao were categorized as bar foods, along with Gambas (a sautéed spicy shrimp). They were great comfort and side dish with beers and liquors and is a great conversational topic with drinking buddies, before making its way as a meal dish.

"…You think a shark is on the beach (?!!??)…" lol Warm, huge (albeit delayed) Welcome to Lucy's parents, btw =D Can't wait for them to try sinigang-any variety-or other local veggie dishes: ensaladang talong with onions and tomatoes, for example, that go with any grilled or fried fish; or veggies with meats which are a fusion of Filipino and Spanish colonial dishes (ex. kare-kare (ox meats in peanut sauce); mechado or afritada; lengua [tongue, but no veggies]). And the island seafood dishes usually grilled or steamed. Grilled stuffed bangus next time, etc. Stay safe, all.
