NORMA STYLE TAGLIATELLE WITH BOTTARGA - To be prepared after the beach recipe by Chef Max Mariola
00:00 Quick quick recipe to prepare after the beach. I want to prepare a sort of pasta alla norma with fried aubergines, sauteed fresh tomatoes and I finish with mullet bottarga cut into flakes. A goodness to make you dizzy.
I'll explain how to choose the right mullet bottarga and how to store it after you have opened the package
00:40 Immediately I cut the aubergines into cubes
01:14 I put a lot of extra virgin olive oil in my wok and turn on the fire
01:50 I put fine salt on top of the aubergines to dampen their bitter taste and make them lose some liquid
02:10 I add a clove of garlic to the oil
02:59 I start frying the aubergines
03:16 I cut the cherry tomatoes in half
03:44 I put a little new oil back into the pan with a clove of garlic
05:03 a little red onion
05:23 I drink a glass of Prosecco Anno Zero
06:15 I add fresh oregano and cherry tomatoes
06:55 a pinch of salt and fried eggplant
07:20 oregano, I skip the whole thing
07:36 I clean the mullet bottarga and cut it into thin sheets
09:36 am I start cooking Leonardo Carassai's tonnarelli with egg, they are a masterpiece
10:22 I add the tonnarelli to the sauce and let the pasta flavor well!
11:15 am I add a little water from cooking the pasta
11:50 a nice grating of black pepper or a little fresh chilli
11:55 Plate by putting a little bottarga on top of the pasta!
