I have read numerous books and recipes for sourdough, but I always end up either confused or mystified or overwhelmed. And I've pretty much given up trying to make sourdough. These three videos really take the mystery out of it and makes me want to try again. Thank you Paul!

Very helpful videos. Over the last few years, I've been learning to bake bread, including sourdough bread. I now have a good active starter that I've maintained for over a year. I honestly can say that I've learned to bake bread through these videos and through Paul Hollywood's cookbooks. Fun. And thanks.

Thanks Paul I gave up on Sourdough after the browning goo effect on the starter slash science experiment. Now that I’ve played with croissants, brioche, Japanese milk bread and just good old fashioned milk bread various ways even malted rye! Long story long I finally realized I shouldn’t have thrown those cute proofing baskets and will def try again. You’re a star. Please bring the bake-off to the US!

Thanks so much for sharing your techniques! I've been struggling with my sourdough since I moved to a place where the temperature gets up to 30 Celsius. It's been tricky to proof for so long without overproofing it. Then I learned to proof it in the refrigerator and it worked. I love that with sourdough we are always learning. Now I need to learn how to make it with a bigger proportion of whole wheat and rye.

I’ve been making sourdough for nearly 4 years now, making a couple of loaves per week. My favourite mix is white bread flour with a bit of rye and wholemeal, and 82% hydration.

Hi Paul. I am enamoured with bread making. I made my first sourdough, baked last night. It was the best tasting bread I've ever had. So, thank you for teaching! I do have a question about the starter. I used the cut grapes method. Does one ever add new cut grapes? When should the older ones be removed?

Hi Paul, I used the throw away remnant into another jar and feed it the same way and popped into the Fridge, I use it for adding to my pancake mix, i found it gave the pancakes a real lovely lightness to my overall outcome. I followed the recipe in Paul’s ‘Bread’ book, starter made with strong white and chopped apricots instead of grapes. Substituted the white flour with a mixed grain flour from Wessex Mill. First stage rise 5 hours, second stage another 5. Unfortunately clear I didn’t use enough flour in the glass bowl in second stage so a layer of dough stuck! Gently peeled off (🙈) and put on top of the main dough then into the oven. 220’C for 30 mins + 15 mins @ 200’C. Crust very hard - I think 220’C fan too high. Loaf a bit dense but with crust removed was ok. Next will, I hope, be better with 210’C (as in video)

Yeah this is how I cook my sourdough recipe, granted I use a Dutch oven. But it's the same. I'm so happy I have the same cutter Paul uses to slice into all my breads.

I have just made my first sourdough loaf and although it looked perfect it was a bit like eating a crusty crumpet.. We still ate it all and it was fine toasted but I wondered where I went wrong . I’m having another go and am going to mix it for longer because that’s all I can think that I didn’t do. All very exciting though.

I have followed your recipe and instructions exactly twice and mine isn’t rising after the proof in the bowl. I noticed you didn’t knead it at all and mine is still pretty wet. Don’t you need to knead and fold/shape it? My does rise much in the pot doing your way. Help!

I have to say this sourdough starter and bake is very different, compared to the instructions in Pauls to Bake recipe book.

Looks like a very typical beginners first loaf in the end, flat,very little oven spring and tight crumb. 12 hours at even overnight room temperature will ovenproof.Add to that no proper folding and rolling shaping the results speak for themselves,The lactic acid was able to build up and kill a lot of the yeast.

I want to know, if a recipe says 500gms of flour does that mean as well as 150gms of sourdough or is it 450gms flour + 150gms ?

I make sourdough bread every week with my 10 1/2-year-old starter, and never saw someone shaping a loaf like that. It is so complicated. And all the flour defeats the lovely high hydration dough.

and how does this change my life?, this is the only recipe on KZfaq where you you use an electric mixer for 30 minutes to mix the dough, everybody else does it by hand, strange!
