Peasant Bread Tutorial (sourdough!)

This is how I make my daily sourdough bread! There are no strict measurements, it’s just a “feeling it” kind of method with some rough guidelines. It almost always turns out!
For a basic white sourdough, just use 7 cups of white bread flour instead of the blend!
If you feel your loaf is too sticky and not holding its form, knead in little more flour, about a handful at a time.
Tend to it all day like a sweet little baby. You’ll know when it’s time to bake because when you fold it it will have bubbles!

Thank you for a nice smooth and simple tutorial on making this Peasant Sd loaf. As someone who has only made two loaves so far I am learning all I can and love it. Would it be OK to cook one loaf the same day and then cold ferment overnight the second dough ball and cook it the next day and if so would you cover it in the fridge or just leave it uncovered? Thank you.

Yes, I sometimes do this! I would advise putting plastic wrap over the bowl, as it will get all dry on top when left overnight. But it has happened that when I leave one loaf for too long I come back to it and it has deflated and I have to toss it. But usually it’s been fine!

ANNIE, is 2 TABLESPOONS of salt correct for TWO loaves of bread?

It sounds like way too much, doesn’t it?! But yes, that’s what I use. You could do 1.5 Tablespoons … I do prefer a saltier loaf!
