This is the way I make my sourdough… rough measurements and feeling when it’s ready to bake. I start in the morning and I bake in the late afternoon or evening!
If you don’t have a sourdough starter it’s best to acquire one from a friend. I keep two-a white, and a wheat-on my windowsill, so I always have some to bake and some to share.
