You have woman power by the way you got the husk off of the coconut.Two tips: add a little bit of lemon juice to the coleslaw and you can also cover the pelau with waxed paper and a pot cover and let the pelau steam-cook. The rice cooks quickly. The pelau and coleslaw looked very delicious. I learned one thing from you though, to season the chicken and the pigeon peas together. I could never do what your wife is doing. She is good. Palau looks so delicious. I do not get pots like that up here only if I go to Fort Lauderdale at the Caribbean store. What I have is some big pots I brought up from Trinidad years ago when weight was no problem. When I come to Trinidad I hope I get to meet you and your family. Beautiful family. I grew up in Arima.
