First, I put a light coat of crisco on the inside of mine, then filled it half way and turned it on. That seasoned it. Next since my smoker is on legs, I went to home depot and got some aluminum vent tube and used that to attach the cold smoker to the smoker. I open the ash tray a bit and open the vent on my smoker all the way. I also turn the cold smoker off after an hour or so. No problems yet. And yes I use pellets.

I have the same set up now after my Bradley Smoke Generator finally died. I had it connected to my MasterBuilt electric smoker. The Bradley was almost maintenance free during a smoke session. I could go 6-7 hours without doing anything to the smoker. The problem with the Bradley is that it is mechanical. Every 20 minutes it would push a wood disk onto a hotplate which caused the last smoldering disk to be pushed ahead to drop into a bowl of water. After a few years the smoker started slamming out the disks one after another wasting the disks. Never had a problem with the smoke getting too hot and causing creosote build up on the food. Always great tasting results. So, I bought the MasterBuilt Cold Smoker Box and did a pellet test as you did except I had it connected to my MasterBuilt smoker. I thought I would season the cold smoker box for a couple hours and then smoke some salmon. I didn't notice any sign of too much heat (yellow tinted smoke) when seasoning the cold smoker box before smoking the salmon. Long story short, I had to disconnect the cold smoker box and use the tube feeder of the smoker to finish the salmon. I quickly realized that the cold smoker box was generating too much smoke, too hot and a yellow tinted smoke was flowing out of the smoker vent. When I opened the door of the smoker it billowed out a cloud of nasty yellow creosote smoke, not the usual sweet bluish colored smoke. I had the air vent/exhaust wide open as I always did because I once ruined a pork roast by closing the vent by three quarters. There was so much smoke it couldn't escape fast enough and eventually that would give the salmon a terrible bitter taste, if I had left it alone. I imagine there's a reason why MasterBuilt actual spells it out in the manual. NO PELLETS! THE SOLUTION: I decided to order a heating element control and install it on the cold smoker box. Hopefully, this will help to control the temperature of the burn to smoldering, thereby producing a much healthier and cooler bluish smoke. NOTE: I also had a quality control problem with the cold smoker. The inside of the top was painted with the wrong type of paint and it started burning and peeling off. I had to remove the top and tape off the outside of the top so I could use a paint remover to clean off the inside, then rather than repaint it I let the smoker do the job for me with an hour of smoking. I would think burning paint chemicals are a definite health hazard! Anyway, I'm not happy with the lack of quality, but hopefully I can remedy that. I hope that helps and God Bless America!

THis totally works, but you HAVE TO OPEN THE VENT on the main smoker ALL THE WAY! I closed it a little bit and the steam went back into the cold smoker and made all the pellets expand and get wet.

On my attachment, I made a silicone gasket for the lid and added an adjustable latch to pull it tight (no smoke escaping). I also fabricated a funnel that fits the hopper opening. Easier to put chips, or pellets, in now. I'd show pics if I could add them here. Yes, it does produce a lot of smoke. Might not be to everyone's liking.

I've never tried pellets in the cold smoking attachment...I'll give it a try after watching this. The chips leave a lot of sticky residue and I'm wondering if all the shaking and poking was because of residue from past smokes with chips. If you really cleaned and scraped it maybe the pellets would go down easier.

Smoking Beard, I notice that the cold smoker attachment has feet on the bottom for self leveling. I also understand it has a hook to hold it in place. My new MBS has legs with casters so the attachment would be suspended. Do you think the hook and bolt would be strong enough to hold it in place? I am thinking it weighs about 7-8 lbs?

What is your opinion on the cold smoke attachment compared to the mailbox mod with tube or tray? I'm looking to get rid of creosote flavor. Do you have this issue with the cold smoke attachment?
@TheSmokingBeard
@TheSmokingBeard 4 жыл бұрын
I wouldnt know how to answer that question. What I will say is that the cold smoker attachment uses wood chips instead of pellets. That might make a difference in the flavor for you. The cold smoker attachment does comes with baggage. Check out my other videos so you know what you're getting yourself into if buying a cold smoker attachment.

Question for you... If you're using this to cook meats as a burner instead of cold smoking I've read that some people have supposedly successfully been able to accomplish a smoke ring on certain meats. Have you ever tried this or been able to accomplish this?
@TheSmokingBeard
@TheSmokingBeard Жыл бұрын
Kind of... in order to get a smoke ring, your chips need to combust. The chemical reaction between combustion and your meat will create that smoke ring. The problem with this is that you have to provide smoke/combustion for and extended period of time to achieve a smoke ring. The magic happens up until the internal temp of your meat reaches 140 degrees F.

another tip for the mesh that separates the chips from the heating elements...eventually the mesh will erode ...simple replacement mesh at home depot...it is the 1/4 in. hardware cloth galvanized..(Everbilt) for about $10.50 and you get 2ftx5ft. just cut a piece into approx. 3.25 in. square and slide it in.

If you have to come out to agitate it every 45 minutes to an hour then why bother with the attachment? I add chips that often in the smoker. There are cold smoke tube smokers for $20 that will get a long smoke. No stoking or agitating. They can be used for cold smoking or a long cooks. Some claim 4-6 hours.

I wouldn't do this personally. I think this thing does absolutely fine with wood chips. Plus it has the right amount of airflow for chips. I'd be very concerned of a fire using pellets to be honest. When I use it, I just turn it on for maybe 2-3 minutes until I see smoke and then I shut it off. Don't need more than that. It'll burn for hours after that unless you hit a really bit chip. But I'd rather be safe than sorry.

its not really a good idea, the smoker causes moisture as it burns then the pellets expand as it takes on the moisture. When it expands, it stops falling down to the burner, so you will have to baby sit it more and poke it from time to time. Maybe its better not to fill the hopper with that much pellets. perhaps 1/3 at a time?
