washing especially soaking meat in water before cooking gets the blood out of the meat, so it helps ridding the gamey smell, and it's a common technique in asian cooking and more! You do have to dry the meat by like hanging it somewhere or patting it dry with paper towel before cooking, cuz with all the water in the meat, marinate wouldn't go inside, and if you put it on a pan durinng frying, it will release all the water out hence ruining the dish. styxo isn't wrong about washing meat on its own, because just running it through tap for like 5-10 seconds does fuck all and won't do shit to the meat, unless it's gone off meat and you need to wash the slime away for extreme-salvaging.
