Ingredients :
2 Large Onions
4 Small Peppers (I used red, yellow and orange)
1 teaspoon salt (to start)
1 tablespoon oregano (to start)
Oil
Instructions:
1. Wash the onions and peppers and then chop them up.
2. Heat a large skillet on medium high heat and then add enough oil to coat the bottom of the pan.
3. Alternate between adding onions and peppers to the skillet. Add the salt and oregano on top of the vegetables. Once the vegetables begin to sweat, turn your stove to high heat to ensure the moisture is evaporated. Continue to cook the vegetables until all the moisture is evaporated. Make sure continuously stir the vegetables as you don’t want to burn them. Continue to cook the vegetables until they are the tenderness you prefer.
Tip: taste the vegetables to make sure you have enough oregano and salt on them, if not add additional salt and oregano to your taste!
