Renowned video blogger for tigerchef.com/ and chef extraordinaire Danny Dangoor teaches how to make perfectly prepared artichokes. Artichokes are an anti-oxidant powerhouse! Ingredients needed to cook these to perfection are artichokes, lemons, and water. Cook time is 45 minutes.
There are several ways to present the artichoke, removing the hairs in the center, or "choke" is important to prevent choking. When you are ready to eat or present your artichokes, you can either serve whole, separated leaf-by-leaf, or by cutting off all of the meat from the bottom of the leaves and served on a plate with a butter-lemon-dill sauce!

Self proclaimed Chef Michael here. I have been eating artichokes for over 40 years. I have come across some delicious ways to prepare them. Instead of boiling the artichoke, steam it using chicken broth in a pressure cooker for 16-18 minutes (start the timer after the 1st steam release that indicates you have the pot pressurized, approximately 2-4 minutes after stove is lit, 16 mins for small to medium 18 for large size) For dips, my favorite 4 are of my own design, (1)a butter dip: butter, molly McButter flakes, onion powder, onion, and salt. in pan add the onion, melt butter, and rest of ingredients mixed in (2) Lemon Curry: Mayo, Jamaican curry powder, salt, onion powder, 1/2 a juiced lemon, lemon zest (3) White Grape Balsamic: Reduce 1 cup of White Balsamic vinegar with rosemary and thyme for 20 minutes, let cool, and salt & pepper to taste preference and last (4) Mustard dip: Equal parts Honey, Dijon, Brown mustard, Grain Mustard seed in white wine, and Chinese Hot Mustard (store made not in packets)

Finally! Someone who appreciates the entire artichoke. It kills me to see when people cut off and discard the leaves and stem. Boiling it long makes it almost entirely edible. My fave prep so far! Thanks!

I usually eat pickled artichoke hearts because they are the best part and getting the meat out of an artichoke takes a lot of effort... but if I am eating a fresh artichoke, I always save the stem. That is all pure edible goodness right there, in a plant that makes you work hard to find something you can digest so why would you throw it away?

Here's how to do it my way. When the time is right, cut the artichokes from the plant and trim them at the base of the flower head. Steam them for about 35 minutes. During this time, press two cloves of garlic into a bowl with a few tablespoons of olive oil, let that rest and make two simple tortillas or slice some sourdough and heat it in the oven. Get your friend to open a bottle of chilled Chablis. When the steaming is done, plunge the artichokes into a bowl of cold water with the juice of two lemons for a couple of minutes. This will cool them down and stop them from discolouring. Sit down and remove the outer leaves, scraping the fleshy bit out with your teeth as you go like a pair of Neanderthals - you don't need to add anything to the flavour - it's perfect on its own. When you get to the middle, break the hearts in two and gently take out the hairy choke. It will just come away quite easily. Loosely chop and slightly mash the hearts with the garlicky oil and spoon onto the tortillas, adding a squeeze of lemon and a little salt.

I always cook or boil my artichokes with SWEET CORN. (1 flower for 1 corn). NO SUGAR ADDED. Then I drink the juice of it after cooking. Very yummy drink, nice smell, addictive taste and of course stay healthy. The drink make me calm and very relaxing all day Drink artichokes helps my "HEEL PAIN" goes away

I like this chef. He prepared the Artichoke in the best way. The inside of the leaves taste too good to just throw away. The choke was nicely removed. I loved this video.

Glad to see you leave the stem on, I always eat most of the stem, it gets just as buttery, also, I don’t even cut the tips, plus I steam them instead of boiling.

How would I make this if I want to stuff the artichoke with breadcrumbs? My Dad and I tried and it seems the artichoke was not cooked enough? Thanks

Very nice, but I prefer to stuff mine. I also peel the stem, cut it off right to the bottom, chop it up and add it to the breadcrumb, cheese, garlic and parsley stuffing. Add olive oil to mixture to moisten it. You can also add a bit of broth or white wine. Open the raw choke, spread the leaves and stuff in the leaves and the middle. I cook in the pressure cooker....6 chokes, 13 minutes... Done !! Put a bit of olive oil on the tops just before you cook them. If you bake them it will take about an hour and 15 minutes, till you can pierce the heart with a fork, or pull a leaf out easily from inside. Make your dip and Enjoy. !! Thanks

I stuff mine also but I leave the stalk on. It is the best flavor .it always comes out soft. I steam them. I use pecorino cheese ,breadcrumbs, green onions, garlic and mint in my stuffing.now I'm hungry I'll have to make some tomorrow.:-) :-) :-) :-)

Really this is a tutorial on how to prepare and cook, present artichokes, not 'make artichokes'. The choke is the seeds, the heart is the plate of the flower. Thistle is the family of this plant. Nice tutorial for what it is about cooking the plant. Tx.

Good presentation thanks. How come no mention of Italian style(one of many!) whereby artichoke is cut in quarts/dipped in lemon water for whiteness/dip in pot after glazing onion or garlic choice/ let cook on mild heat(not to break those lovely quarts), then add homemade tomato sauce for 15/20 mts on med.heat/sprinkle chopped Italian parsley for "garnitura" and serve hot temp with beautiful rice covered with sliced/roasted almonds on the side of same dish. Great treat on Sundays, since this dish can also be cooked with minced meat(after glazing onion or garlic). Delicious, and healthy family meal since artichokes are known for iron support and major nutrients excellent to any age. Buon appetite, ciao! End

Steaming is far superior, you lose both flavor and nutrients in the boiled water.

Pros and cons? Imho.....if you notice in the video- look how water logged the artichoke is when he starts to remove it's various parts. That doesn't happen with steaming unless it's over steamed.....short answer cut top third of artichoke off and any other undesired parts,place a small amount of water in a pan, put in a steamer basket(water just under basket surface), turn artichoke upside down(stem up) and stem until done. Test with a fine toothpick or knife until it slide into the heart without much resistance(after 20min, check every 5), remove and cool slightly upside down on a dish with a paper towel or something similar. Perfect!

The answer is twofold, first only very few vitamins are affected by heat and that's dependent on the amount of heat applied. The vast majority of components are completely unaffected by cooking and the heat is present regardless of the method of cooking. Perhaps uncooked would be good? I'm not sure about that but I recommend that method for those who are concerned about the effect of cooking food.

I'm not sure but I'd say probably the vitamin c since it it hydro soluble and killed by heat but most of it should still be valuable.
