Chicago Thin Pizza Recipe
This Makes Two 14-inch pizzas
By Weight:
All Purpose Flour (100%): 610 g | 21.5 oz | 1.34 lbs
Water (50%): 305.14 g | 10.76 oz |
Rapid Rise Yeast: (1.5%): 9.15 g | 0.32 oz | 3.0 tsp | 1 tbsp
Regular/Fine Salt (1.5%): 9.15 g | 0.32 oz | 1.87 tsp | 0.62 tbsp
Sugar (0.7%) 4.45 g | 0.151 oz |1.0 tsp | 0.36 tbsp
Corn Oil (3%): 17.95 g | 0.63 oz | 4 tsp | 1.33 tbsp
Total (155.25%): 955.84 g | 32.76 oz | 2.05 lbs
Single Ball: 477.92 g | 16.38 oz | 1.02 lbs
By Volume:
All Purpose Flour: 4 cups using the "dip and sweep" method
Water: 1 and 1/4 cups
Rapid Rise Yeast: 3 teaspoons
Regular/Fine Salt: a little less than 2 teaspoons
Sugar: 1 teaspoon
Corn Oil: 4 teaspoons
Chicago thin pizza sauce:
26 to 28 oz tomato puree
12 oz tomato paste
1 tbsp dried oregano
3/4 tsp salt
1 tsp sugar
1/2 tsp ground fennel
1 pinch red pepper flakes
1/4 tsp garlic powder
Add water to achieve desired consistency.
Directions:
Dry ingredients: Put flour, yeast, salt into mixing bowl. Whisk mixture together.
Wet ingredients: Add water and corn oil to flour.
Use paddle attachment on low setting to combine all ingredients, about 2 minutes. Remove excess dough from the paddle and pack in to a rough, crumbly dough ball. Place dough ball into a large, partially sealed plastic bag and refrigerate for 6 to 48 hours (more time is better).
Roll the dough out using a rolling pin on a floured surface until it is about 1/8 inch thick. Use a pizza serving tray or plate and cut circle measuring about 15 inches in diameter. Remove excess dough trimmings and save them for some other use. Transfer circle of dough onto a pizza serving tray lined with parchment paper. Cover top of dough with another sheet of parchment paper and refrigerate for 20 minutes to 2 hours. Additional dough pieces and trays can be stacked if making multiple pizzas. If the pizzas will be in the refrigerator for longer than 2 hours, wrap them with shrink wrap to prevent the dough from drying out.
When ready to make pizza, move the dough onto a pizza peal sprinkled with rice flour or flour to prevent the dough from sticking. The dough does not need to thaw after removing from refrigerator -- simply remove pizza from refrigerator and begin topping the pizza.
Add about 4 large spoonfuls of sauce, a generous amount of cheese, and your toppings.
Bake the pizza on a pizza stone or baking steel in an oven pre-heated to 450 degrees. Bake time will average about 10 to 12 minutes. Pop any bubbles that form during the bake using a long fork or skewer.
Remove from oven and place on a cooling rack when the cheese is just starting to brown and the bottom of the pizza appears light brown. Place it onto a serving tray, slice the pizza tavern style, and enjoy!

Love this recipe! Reminds me of hometown pizza, now that I’m Texas 😊 Couple tips from someone who worked at pizza restaurant in Chicago and made these types: Let the dough warm a bit after you take it out of the fridge. It’ll puff up from the yeast but won’t get so much shrinkage and easier to roll out. Put some breadcrumbs/cornmeal on the pizza paddle so the dough doesn’t stick when you put it in the oven. Sprinkle a bit of oregano on top to give it an extra hit of flavor.

A Chicago pizza place should move to Texas to make pizza. I was surprised how most Texas pizza was made with a lot of corn meal. The pizza crust was way too hard and the sauce was spicy:-(

Very nice job guys. I grew up in Chicago and I get tired of everybody thinking Chicago pizza is always deep dish. The best Chicago pizzas are flat and made like this!

I made Tim’s pizza today and it’s absolutely perfect! I let the dough rest in the refrigerator for 27 hours. It makes the thin crispy crust pizza I grew up having in the pizzeria’s back at home in the Chicago burbs! Best crust ever!

As a lifelong Chicago area native, I know tavern style pizza. It has been a weekly tradition for several decades. I've only tried pizza at home using store bought crust, but you're tempting me to finally break down and buy the Kitchen Aid mixer with dough hooks. That tavern style pizza looks totally legit. This is a great tip! Another thing to modify from this video is use corn meal on your board when rolling it out. It serves the same purpose as flour, but you'll get a fantastic texture in your crust when it cooks!

Definitely like this video ! My challenge, and that of others I’m sure, is not having so much room in the refrigerator, and maybe not the home oven. I presume this can be scaled, and how to store the second half of the dough, and for how long will it keep under what conditions ?

Awesome technique and recipe. A long time ago when I worked pizza lines in Chicago we would dip the raw sausage in a little bowl of sauce we held off to the side. When that sauce caramelized, it brought another level of goodness to the party. Subscribed!! 👍🤘

Thanks for watching! If you want a butter flavor for the crust, leave a little rim of dough instead of taking the sauce and cheese all the way to the edge. Then when the pizza comes out of the oven brush it with melted butter. We like to add a bit of garlic to the butter to add additional flavor!

I subscribed last week and been watching a few of your vids...very nice getting the boys to help out. Im from WI and miss this type of pizza. I have a gas hybrid Alpha oven that gets to1100 degrees and make Neapolitan style pizzas in about 1 minute. Curious if you might know if I tried your recipe and I turn the oven to low which is around 500 degrees if I could get the same excellent results. Keep up the videos, we really enjoy them.

I was under the impression that Chicago thin crust pizza is on a laminated crust (aka cracker crust), that pizzerias there ran their dough through a sheeter multiple times, folding it once for each pass through. The pizza looks very good, I will attempt to make one this weekend. Thanks for the recipe.

Not exactly a cracker crust as there is yeast. St Louis does a true cracker crust with no yeast...more crispy. Most Chicago places do use a sheeter but it is not folded for multiple passes through the sheeter...the sheeter is just used to get a consistent very thin crust. We always put the dough through a pre-roller to get thin and then ran it twice through the sheeter turning 90 degrees for the second pass just to get a rough circle.

Great video! I have been trying to perfect a good chicago style pizza at home. Pretty much looks like yours when it comes out and the outer third of the pizza is nice and crispy, but the middle isn't as crispy. Thinking of maybe cooking the crust by itself for a few minutes before putting everything on (i'm using a pizza pan with the holes in it). How is the middle of your pizza?

Thanks for the comment! Ours is nice and crispy throughout. Try baking your pizza on a lower rack and possibly baking it 50 degrees cooler in the oven but for a longer period of time. Let us know if that works!

I'm curious if you have ever tried provel cheese? I have been watching your videos, and my wife and I have been on a pizza making adventure lately watching different channels and their methods / tricks. I feel like we're slowly learning haha. I think you would like provel if you tried it though. Some people hate it (from what I've heard), but it adds a really silky texture to pizza and interesting flavor. The tavern style pizzas with provel are called St. Louis style which is what I grew up with, and it could be another video idea for you if you are interested. The crust may be a bit different than this one, but they seem very similar if not the same. Lately, I have been trying it with New York style pizza 50/50 mix of provel and mozzarella. Does not disappoint at all 😋

Thanks for the comment! We use cold, filtered water (from the refrigerator door). The dough will be placed into the refrigerator immediately after making it, so room temperature water would also be okay.

I've worked in 6 pizza shops and bars in chicago and not a single one uses that flour. Three of the shops I worked at had special flour blends with things like folic acid and niacin added. Most don't use all purpose flour. Ardent Mills provides a lot of flour. King Arthur has recently started taking some of the market.

We usually let it warm up for at least 2 hours after removing it from the fridge. We do this because it makes it a lot easier to roll out when the dough i warmer. Thanks for the comment!

Hello, can you please share your homemade sausage recipe? Thats the toughest part for me to duplicate the Chicago sausage which has a very unique taste. Every Chicago style recipe online always calls for store bought Italian sausage which isnt the same. Thanks!!

Pretty close but use very cold butter, not oil and use a food processor. Much like making a pie crust. The crust will be flakier and maintain its crispiness longer. Cornmeal goes on the peel, not flour. The cornmeal is a very important part of the flavor of the crust. I was very happy to see raw bulk sausage that got covered with cheese. Bravo!

Looks great! Why corn oil instead of typical olive oil? Also why rice flour instead of the typical semolina flour?

Thanks for saying our pizza looks great! Corn oil is used in these pizzas because corn oil was very common and readily available in Chicago when these recipes were developed, while in Italy, olive oil was widely available so it is the oil of choice in more traditional Italian pizzas.

We like to use rice flour because if leaves very little residue on the bottom of the crust and works well for sliding the pizza off the peel. We also like using semolina or corn meal but these can make a bit of a mess in your oven and can smell burnt if you don't clean it all out between pizzas. Also semolina and corn meal can the change the taste of the crust (perhaps for the better!) but sometimes we just want to taste the crust as it is without any extras.

Using a pizza stone or steel is the best, however if you don’t have those, you could use and inexpensive metal pan.
