Here's Gill Meller, head chef at River Cottage, making perfect roast potatoes for Christmas: crispy on the outside and fluffy within. What's your secret? Tell us below.
- - -
INGREDIENTS:
• 1kg of floury potatoes, such as Cara or King Edward, cut no bigger than a golf ball (for four people)
• Beef dripping (or 50-50 olive/sunflower oil if you prefer)
• Salt
• Pepper
DIRECTIONS:
Par-boil the potatoes in gently boiling salted water for about 10 minutes (from cold to simmer). Stop cooking before they're tender all they way through. Strain through colander and put to one side.
Leave them to cool completely for 10/15 minutes to dry up.
Meanwhile put the beef dripping in a baking tray for about 10 minutes until smoking hot. Add the potatoes and turn them in the pan. Add twist of pepper and a pinch of salt and put them in an oven at 190C.
Roast for 35 minutes,then give them a turn and return for a further 15 minutes.
Remove, pile them up high in a bowl and serve.

After I have boiled mine, I drain out the water, put a lid on the pot and shake it about a bit, careful not to break them up completely but just soften them a bit - that way they get a fluffy exterior and you get an extra crispyness!

A different way of sorting the potatoes in the US, but luckily I live in Vermont, and a lot of good heirloom varieties are grown here. I couldn't say if one is BEST, but they certainly all behave in their own delicious manner.

Gil is the most interesting, nicest of the River Cottage crew. This is a great recipe. I'd add garlic & rosemary for a knockout result.

It was educational, they showed everything he did and how he did it. Peels and wash potatoes, chopped them boiled them, drained them and left to sit, melted the fat and then roasted the spuds. It's simple

Yum! Never used beef fat before to make roasted pots. I am going to give this a try. I have been making bone broth so I have some beef fat!!!! Appreciate you sharing this video....

I do mine with olive oil. I parboil the floury potatoes, let them steam off for a while then add them to the roasting tin. I drizzle some olive oil over them, just a tablespoon and a half for a kilo of potatoes, then jig them round the tin so that the potatoes are completely covered with a thin layer of the oil. I then sprinkle Finnish aromisuola over the potatoes and pop them in a 200 degree oven on the top shelf for 30 minutes. After that time, I turn the potatoes over and roast for a further 15 to 20 minutes. Perfect results every time. Crispy roast pots that are fluffy and floury inside.

Yes! Beef dripping every time. Also great with the perennial favourite goose fat, but dripping is cheap and has so much flavour! Trust River Cottage to recommend the tasty and great value way of doing things.

made roast pots for the first time with dripping last saturday and will never go back to rubbish oil. not only crisped up as never before but the flavor from the dripping was fantastic. and to think all these years ive been doing it wrong. save the oil for the mao and dressing and carrot cake

For such high temperatures, lard is best, you can find it near the butter in most large supermarkets. Oils are bad for you at high temperatures.

As long as we aren't too close to the food. Lots of cooking videos take closeups where you cannot see the whole bowl too much. Rule of thumb should be see the amount the cook does. that's what I need to do the job.

I do most of these stages except I don't boil the spuds to the extent that you do, so I put them in boiling water for maybe 10 minutes depending how large I cut them. I want the outside cooked so I can rumble them in a collander with a lid without them breaking then adding some rock salt to roughen them up. Putting them in from cold and bringing up the heat seems like it would cook them more to the center and make them crumbly. In the last few years I don't peel them either, aside from washing and scrubbing. If the skins don't get quite rough enough I gently scratch them with a fork so the hot oil can get in and make them crispy like potato crackling. Maris Pipers or Red skin varieties seem to work the best for me. I actually don't see King Edwards around much since our green grocers was forced to close a few years ago. He left a rather angry notice on the door about the large Co-Op that opened just around the corner. Love the channel.

I use King Edwards, they're definitely better.. Or Maris Pipers, but Tesco stopped selling them lately. I bring them up from cold, 6-8 minutes at the highest heat. So mine boil not simmer. Then into hot Olive Oil. I sometimes do then with the skin on, but they're never quite as nice, though scratching the skin might be a good idea..

Hi Will, im a really keen cook and have worked in pub kitchens for about10 years in the past, im not being funny but iv just brought an Air Fryer and every including roast potatoes, chicken, steak, fish, even a toasted sandwich!!! taste miles better, looks better , so much easier have you tried this? can a recipe or 2 on this? honestly mate its blown me away and there brilliant, could be the end of the traditional one!?...

It is roast potato's, you peel, you quarter, you place in cold water bring to a simmer, add beef fat to a pan, cook that off, put onto the tray, put back into the oven. It is not rocket science.

When you put the spuds into the hot fat, using a silicon brush to put in the oil and brush the top of the spuds. Much quicker & easier than turning them.

Best potatoes for roasties are Alfred Bartlett’s Roosters (Irish bred) available from Sainsbury’s , Morrison’s or Ocado on line. They need to be in a tin Gill ! I also melt some butter on the boiled spuds before putting into roasting tin and don’t forget salt and pepper !!

Sometimes I add powdered garlic, onion and paprika to the oil before I add the potatoes. Sage is also good if serving with chicken.

The beef dripping I know is when you cook a roast beef and have the fatty oil on the bottom of the tray, you put that into a small jar and can keep it and use it like he did. But his looked proper store bought.

Never tried beef dripping But will do I have always used goose fat which was very good. But goose fat hard to get now I have moved to Thailand

Why do you peel into water? Try peeling on to kitchen roll and have a saucepan of water handy in which to drop tne peeled potatoes. No muddy water!

No the guy's right. It's the same as frying things properly. If you push them together and crowd the pan they will boil rather than fry. This chef is awful.

Or they will steam! Just what I thought he needs a larger tray. Being British I've been roasting potatoes since Adam was a lad and I always get rave reviews. Btw it's nice to cook them in duck or goose fat with a sprinkling of sea salt and rosemary!
