I know! This is so useful, actually. I almost always make a mistake with each new recipe. As someone who sometimes flips some numbers and letters (not full dyslexia), almost all of my first tries are "off" in some way. Haha. I just keep going like Becky does, but she's really clever with her fixes. I would never have tried to cream more butter and put the dough back in! Brilliant!

Like you said you are a real kitchen! Don’t be embarrassed about your mistakes because you actually admit to them and you show how you fix them. That is what makes me enjoy your channel! Never change my friend. Even at 46 years old I have learned a lot from you about gardening, cooking and homesteading!

I made Josh's grandmother's banana bread recipe yesterday you are right...it is so good. I also made the biscuits you made and they are great. You are such a joy to watch. You don't know the number of people you've helped, especially new cooks, in showing us all that everyone can make mistakes, and we should throughout read the recipe, including the directions, and time the recipe takes, between resting, freezing, baking, or dipping. You've probably helped more people, by leaving in your mistakes, than if you did everything perfect! Thank you!

Oh Becky, never feel embarrassed for making boo-boos in the kitchen. We all do and it makes me feel like I'm okay when I make mistakes instead of being hard on myself. @@leradoms Oh my goodness, I'm so sorry that happened! How are you today? I'm a quilter and when those rotary cutters first came out I was using one to cut a stack(much too large of a stack) of fabric and was pressing hard while cutting and the cutter slipped backwards instead of going forward and it hit my stomach. I was afraid to look until I seen my shirt was cut then I knew I had to look. Yep, a clean cut through my belly that was too deep to just ignore. It took 15 stitches. The ER doctors and nurses couldn't believe it. Lol I know it was a first for them. It was a first for me too and the last. Live and learn dangerous lessons sometimes. 🙃

Seeing how you adjust when a recipe isn't turning out perfectly is actually extremely helpful to me! As someone who is just learning to cook (you've inspired me so much) I don't instinctively know what to do when a recipe goes wrong. It really helps me when I can see a cook get herself out of those situations and save the dish, instead of just assuming it's unsalvageable. Thank you for inspiring and teaching and reminding us to having compassion for ourselves. 💓🙏

Marzipan is a sweetened almond paste/candy. Frangipane is an almond 'cream' of French origin. Both use almond extract or almond oil to get their distinct almond flavor. So Josh is right, the cookies you made probably do taste like marzipan or frangipane, since the almond extract is what gives that special flavor... very common in European desserts, so it makes sense that his Dutch family would be familiar with this flavor.

Plant some chives, they're perennial, work just like green onions. You could grow them & other herbs in your sunroom, Becky. A little bit of Worcestershire Sauce in with your cheeseball mix adds great flavor, too.

I finally added onion and garlic chives to my garden last year and they are producing so much now and I love them. They come in handy when I need more green onion tops for recipes! And my favorite is the garlic chivea:-)

Chives are something you can start in a cool spot indoors. All the better if they have some natural sun light (hint: by the slider in the basement). They take what seems like a long time to germinate and be ready for outdoors so many begin them in November or December. They do germinate better in slightly cooler temperatures but can also hang out and grow indoors if you seeded them a little early.

@@terryhenderson424 I've grown them outside in an old wooden box by the hose connection. They will spread and fill whatever container you sow them in. They can also be dried, ground up, & used like onion powder. They make a pretty purple flower that looks nice in a bouquet too.

Bless your heart for leaving your mistakes in. Too many KZfaqrs try to look perfect and it just isn’t realistic. One of the many things we love about you is how real you keep things. I am absolutely dying over those witches fingers!!! I've seen the recipe several times before, but never watched someone make them. They're so much better than I even imagined. I reeeeeeally want to try to make them now! And, to be honest, I love seeing your mishaps in the kitchen. They're such a normal part of trying new recipes, and cooking in general. It makes your videos relatable, and also shows that a beautiful delicious product is still totally achievable, even when things don't go totally as planned. ♥️ I appreciate the transparency.

Maraschino cherries are pie cherries that have been pickled and then flavored with sugar and Maraschino (also called Maraska liqueur), a liqueur made from Marasca cherries. Cherries and almonds are in the same genus, Prunus, and both use cyanogenic glycosides to protect themselves from insect pests, especially the leaves and kernels. So they all share the same general flavor characteristics. Almonds are most closely related to apricots and the almonds used for almond extract are bitter almonds which have higher concentrations of cyanogenic glycosides. In low doses cyanogenic glycosides seem to improve respiratory health but we can't handle high doses (we have evolved to taste them as incredibly bitter which is why bitter almonds taste so bad, because they have enough of them to make us sick). If you ever prune a tree in the genus Prunus you will experience the same smell and the same flavor and aroma is imparted in the smoke which is why cherry wood pellets are available for smoking meats and fish.

We all make mistakes or misread things. When I was pregnant, I had such terrible pregnancy brain! I once left the phone in the fridge and spent the entire day looking for it. Apparently, I was so hungry, that I put down the phone while grabbing a snack, and shut the door lol! It happens! You’re doing amazing!

Since I am Dutch I know exactly what Josh's parents are missing from the Netherlands: banketstaaf and also ask them about borstplaat and suikerbeesten, I am sure they will know what that is! I have found that since I started weighing my flour, my baked goods have gone to the next level! If you don’t want to weigh, fluff your flour in your container and use a spoon to scoop it into your measuring cup then level the top off. I think you’ll notice a difference in the finished product!

Please dear Becky please don't put your knives in the dishwasher. I have seen you do that several times. That is the quickest way to dull your knives. Hand wash and immediately dry. No need to invest in expensive knives then dishwasher them. It defeats the purpose. Thought I would just pass on valuable info.

Becky, you keep it so real, and you have a lot of courage to put your mistakes out there..we all make them! Anyone that does any appreciable amount of work in the kitchen has felt the frustration of things going wrong.. sometimes we feel defeated, we swear under our breath and then we move on and recover somehow. You should be gaining confidence because you are a kitchen hero!! You came into all this winging it, as they say, and are becoming a real pro!! On top of all that you are so incredibly generous with your time, effort and resources. All of this is what makes you an amazing human being and role model.

I like when you show mistakes in cooking. It is better to adjust then to waste. People make mistakes in cooking all the time and need the confidence to know it can be fixed or turn into something else. The cheese ball spread would be good on a cooked pizza crust with fresh veggies and cheese sprinkled on (pillsbury has a great recipe).

As someone who hasn’t built the best cooking skills, I SO appreciate you showing us the errors you make. Oftentimes I throw away what I do or just don’t ever do it again out of frustration. I bet everyone enjoyed all the treats! The pumpkin cheese ball looks so yummy! One of my coworkers has a physician for a wife, and every Halloween she made the witches fingers- quite realistic, but instead of jam she used that gel icing in the squeeze tubes. I am saving the video for bedtime relaxation, but I just had to tell you that today I did three desserts and a double batch of homemade meatballs as well as a special dip for our family Halloween party. Everything was planned out for the cooking session AND-I used parchment paper to line the baking sheets and the counter for easier clean-up! All inspired from spending time with YOU, Becky!!!😊🎃

My mother in law has always had a designated cotton tablecloth that she spreads on the bench before she cooks. She does this when she is making pies and scones and other pastries. She actually flours the area and rolls on the tablecloth, nothing sticks. When she is doing just a couple of cakes she uses a small tablecloth about a metre square. She said her mother always used a piece of calico to do her baking. When you have finished baking, she rolls it up and takes it outside and shakes it so the scraps are spread for her birds that visit every day. The cloth is then washed and returned to the tea towel draw for the next time. I have been using her method for at least 20 years and will not change, it saves so much mess and all I have to do is roll the tablecloth up and the area is clean.

When you show your mistakes or your little messes it makes the rest of us feel like it's okay when we make mistakes or make a little messes. We are real people figuring things out as we go. One great thing to always have handy, is dehydrated (or for you: freeze dried?) leeks. If you had that, you could’ve used it in place of the green onions. I love my leek powder, actually my dehydrator is running now, stuffed with leeks for a new batch of powder, as I was running low… One great thing with making such powder too, is that you can use the whole leek, I only remove the outer layer, cut through it back to the root (leave the root intact) - makes it so easy to clean them before cutting them in slices for dehydrati9n! YUM! 🤗 💓💚🌱🍀🌱💚

Almondpaste/amandelspijs here in the Netherlands around the holidays they have pastry filled with the almondpaste. It is called Amandelstaaf. You make very nice pastry dough so if you would fill that with the Almondpaste you nail it. The Amandelstaaf is formed as a rod of Almondpaste rolled in pastrydough. I make those peanut butter cookies for Christmas every year (same recipe you used), but we call them peanut butter blossoms, and put a Hershey's Kiss on top. They are one of my favorite cookies. 🥰

We put Brachs stars on top of the peanut butter blossom cookie instead of Hershey's Kisses because we found that it's easier to bite down on a chocolate star so that you get equal distribution of chocolate and peanut butter cookie in each bite. Plus, you don't have to mess with unwrapping the foil from a Hershey's kiss!

Thank you for the Halloween fun in the kitchen. When my kiddos were home, I used to do all kinds of holiday treats. I did lots of cakes and cupcakes for our church’s annual Harvest Festival. My kids dressed in “ non” scary costumes and went to our church where there were games and food and the ever popular cake walk. I hope you had fun at the party. Thanks for sharing your day with me!

Becky, I make a grocery list of what is needed at the store, so nothing is missed for a recipe. Will also measure out so everything is ready according to the recipe. But will reuse the bowls for the next cookie recipe to help cut down on dishes. Just suggestions, this is what works for me.
