HOW TO MAKE SIMPOL PERI-PERI CHICKEN

You can easily follow this step-by-step video to recreate the dish in your own kitchen. This one’s as close as you can get to the Portuguese BBQ with a Filipino touch. INGREDIENTS
1 whole chicken
For the peri-peri chicken marinade:
2 cloves garlic, minced
1 tablespoon dried chili flakes
1 tablespoon sweet paprika
1 teaspoon grated ginger
4 tablespoons soy sauce
2 teaspoons black pepper
6 tablespoons cooking oil
1 tablespoon sugar
1 tablespoon dried oregano
1 tablespoon dried basil
1 red bell pepper, sliced into strips
1 green bell pepper, sliced into strips
1 white onion, sliced into strips
For the rice pilaf:
cooking oil
1 tablespoon margarine
1 teaspoon minced onion
1 teaspoon minced garlic
1 cup rice
1 teaspoon salt
1 cup chicken stock
4 tablespoons olive oil
chopped cilantro
salt
black pepper
