About Panini Sandwich
A panini (Italian pronunciation: [paˈniːni], meaning "small bread, bread rolls") or panino (meaning "bread roll") is a sandwich made with Italian bread (such as ciabatta, rosetta, and michetta), usually served warmed by grilling or toasting. And Pesto traditionally consists of crushed garlic, European pine nuts, coarse salt, basil leaves, and hard cheese such as Parmigiano-Reggiano (also known as Parmesan cheese) or Pecorino Sardo (cheese made from sheep's milk), all blended with olive oil. |

Thank you for the ideas! I was hoping to make this without the cheese for a road trip. Didn't have the time to do the panini part though and just made regular sandwiches. I added some worcestershire sauce to the mushrooms and pepper during cooking, and added some calabrese salami to the sandwich while omitting the onion and cheese. It was satisfying!

Looks delicious, but a genuine doubt- is it still pesto without the recipe having olive oil and pine nuts? Because without olive oil, it becomes more like a continental green chutney.

Hello, Walnuts is another and readily available alternative for Pine Nuts Also, we purposely skipped olive oil because it would have made the sauce even softer in consistency, and it would have made the sandwich soggier.
