This is the first time I’ve ever put cucumber pickles on pizza (pickled peppers of various sorts is a staple topping for me - especially jalapeõs or banana peppers), and it’s also the first time I’ve put what’s basically ranch dressing on pizza (I.E. a mix of mayo and sour cream).
To be honest, the idea of ranch on was something completely foreign to me until I moved to the West Coast, and the idea still kinda grosses me out.
That said, it was delicious so now I’ve got this whole cognitive dissonance thing going on that I don’t know how to deal with, but it’ll probably be dealt with through pizza.

Best pickle pizza I had was a falafel pizza. Rosemary garlic oil, falafel, parmesan, tomato, pickles, fior di latte, and tahini sauce.

Love it, I work on a wood fired pizza truck and we have a similar pizza with cheese/thin sliced dill pickles/red onion, then we finish it with homemade ranch on top. Pickles on white pizza is underrated!

@@OsamaRaoPK It depends, most of what you learn in culinary school in the west is based on specific precepts. But if you travel the worlds you'll learn that other cuisines tend to break whatever rules the frenchs have written (let's say... how to cook mushrooms, for instance) And Kenji applies lots of knowledge from different cuisines to his cooking + his scientific approach to it makes it so that you can always learn something that the classically trained culinary student wouldn't have ever seen in a book

You have no idea how excited I was to see you post this video. We've been seeing pickle pizzas pop up in Pennsylvania since around 2012, and it's become one of my wife's favorites! I manage a deli for a small grocery chain and occasionally make these to bring home (and very, very occasionally make them at home). I use a premade store brand ranch base, Dietz & Watson pickle barrel pickles, pizza cheese, and then i hit it with dill at the end after it's done. It's a glorious pizza.

One of my favorite pizzas to make has toum as the base, with Asiago, thin sliced clausen pickles, red pepper flakes, and fresh Dill. Good warm but even better the next day cold out of the fridge, the pickles firm back up and get crunchy

Decades ago, I got a book for Christmas with all kinds of pizza ideas. I remember the Reuben pizza, with 1000 island as the sauce, corned beef, sauerkraut, swiss cheese and pickles. It was good, but just made me crave a regular pizza all the more. To each their own lol. The M&M with chocolate and peanut butter wasn't bad at all!

Pizza Friendly Pizza here in Chicago had a seasonal pizza a few months ago that had thinly sliced potato, dill pickle, and cream sauce similar to yours and it was incredible. Also, they're a Sicilian-style joint, too, so the crust is on point. Seriously worth a stop if you're ever around these parts, Kenji. Highly recommend the Miso mushroom slice. I dream about it.

Potato is interesting! I may try that at home. Did it look like they were prepped at all before being put on the pie? Seared or otherwise cooked or boiled prior? Or did it seem like all their cooking was done on top of the pizza? I guess I can experiment myself and see what works best but I figure I'd ask anyway.

Yeah wtf is going on with the potatoes if you're putting them on pizza? Maybe I could imagine it if you made the best roasted potatoes ever recipe, in smaller chunks, with heavy rosemary seasoning or something interesting. But otherwise it sounds like Mac & cheese on pizza: too much starch with no redeemable/meaningful flavor addition to balance it out I need answers plz

I started putting pickles on pizza when I was in first grade, over 30 years ago, and still have a jar ready for anytime I order pizza to this day. I am always on the lookout for pizza spots with pickle options, but I don't cook much so I've never made my own. This looks amazing, so I think I'll have to try my first!

Good call pairing it with the Space Dust beer. Reminds me a little of my Octoberfest pizza, mustard base, with sauerkraut, brauts, and Swiss cheese.

I always place cold acidic things on hot melty pizza I make - I usually go for a slightly thinner - but same hydration - of a Detroit crust. I like summer tomatoes lightly salted with good balsamic, cold banana peppers, cold jalapeño slices, diced spicy pickles, or sometimes just balsamic dressed arugula and tomatoes. I LOVE cold crunchy acidity next to hot, crispy, cheesy, savouriness. I would go for this but would also wan cold crunchy ones on op with some greenery. When I make buffalo pizza, I make some diced celery quick pickles with peppercorns, dragon chilis, white wine vinegar, and red onions to chill and top the finished pizza. Hot and cheesy + cold acidic crunch is my favourite combination.

I've done variations of this but with a garlic bechamel... adding in mascarpone which I feel counteracts the tart/brine of the pickles! And Shishitos for the peppers!

Kenji,you have to come to Syracuse and try Toss & Fire’s pickle pizza. They do Neapolitan-style wood fired pizza, and the pickle one has a garlic olive oil base topped with mozzarella, cheddar, dill pickles sliced thin, and applewood smoked bacon. After it’s out of the oven they drizzle the whole thing with ranch. It’s really something else.

Mayo and garlic is the sauce for my white pizza (plus hot italian and artichoke hearts). Never tried it with pickles, but sounds awesome.

I use creamy Alfredo sauce, smoked canadian bacon and Mozz/provalone cheese mix. Sliced dill pickles and dill seasoning. The key for me has been the smoked canadian bacon.

Hi Kenji, I would love a fridge tour, please! I am nowhere near a professional, but my fridge is always so packed with condiments and things like that that it’s ridiculous and doesn’t leave much room for real food. I would be fascinated to hear your thoughts on what you keep and, if your strategy is to just dispose of specialty items after you use some for a recipe instead of storing the leftovers? After the fridge tour, maybe a follow up video could be a pantry tour, because I have way too much there too.

When my kids were young we never told them that there "wrong ingredients" on a pizza so they'd always pick whatever they liked. My daughter loved pickles so naturally she would order pickle pizzas and I honestly expected them to taste terrible but they were really good.

I love your books and just found your videos, which I love too; I'm learning a lot. My one glitch is that I can't watch the videos from your head mount as I get vertigo very easily from rapid camera movements. I'll listen though, and read any transcripts you put in (my son will love your kimchi grilled cheese!!). We get to Seattle at least once a month (from the east side) so we'll try any restaurant you review, for sure! Thanks for all you do--I rarely gush this much but you give a lot and it is appreciated!

have you tried donair sauce on pizza? it's very popular in eastern canada. a sweet garlic sauce made with condensed milk that you can add on cooked pizza :)

You mentioned in beef bowl video about layering onions, putting them in at different times so you get the best of both worlds. Same here with raw & granulated garlic. Could you expand on any other nifty ways to do this, or other ingredients it works well with? I've been adding tomatoes in like 3 stages for sauces so I get bright on top of deeply savory flavor, & same for onions/garlic: once at beginning so it gets caramelized, midway for sauteed/roasted texture, and some right before plating so it's barely softened & still sharp. Heck maybe even pickled onions on top or fermented honey garlic if I'm okay with my sweat smelling rancid. But it takes a long time when simmering. I'm just curious if there any dishes or techniques that center this or faster ways to get that complexity

Seems like the moisture in the pickles prevented the top from browning up more. Could you give the pickles a pre-sear to dry them out?
