Love Me Some Cat Fish , But you Gotta try some Bullheads tails on skinned w/ Sazon seasoning a pinch of Cajun and at the end A splash of lime 🤤 . So good 👍 and the tails seasoned got a wonderful tasty tater chip crisp . But CHARCOAL GRILLED! only way ..

Heck yeah! Parm works really well in breading, doesn't taste cheesy, it just adds umami & some salty depth. When I make mine like this I'm going to add that as well.

Panko is Japanese bread crumbs for breading fried foods. The pieces of breading are much bigger than typical other breading mixes you might get.

It seems counter productive, but the best panko breading cokes from misting them in water until they are a softer texture. Not looking for a batter, but a moist panko. It let's you pack more crumb on and fries more crispy as a result

I always go to 155-160. Most restaurants do that as well. That’s how to keep chicken juicy. Perfectly safe as well. The 165 thing has a bit of a buffer for idiots.

Chicken breast can be cooked to 149 and then rest for at least 3 minutes, the carryover cooking from the external heat will do the rest, the juiciest chicken breast I've ever had!
