Ingredients;
Cake Batter
2 Sticks of Land o Lakes Butter
3 Cups of Dixie Crystal Granulated Sugar
5 Egg Whites, room temperature
1 Teaspoon Pure Coconut Extract
1 Teaspoon Pure Vanilla Extract
¾ Cup Pineapple Juice, room temperature (1, 20 Ounce Can of Dole Crushed Pineapple Drained with Juice Reserved)
¾ Cup Buttermilk, room temperature
¾ Cup Sour Cream, room temperature
5 Teaspoons Baking Powder
3 Cups of White Lily All-Purpose Flour
Cream Cheese Frosting
1 Stick of Land o Lakes Butter
1 8oz Package of Philadelphia Cream Cheese
3 1/2 Cups of Domino’s Confectioners Sugar
1 Tsp of Vanilla Extract
1 Tsp of Coconut
Whipped Pineapple Coconut Filling
•¾ Cup Cream Cheese Icing
Frosting (above)
1 Cup Cold Heavy Whipping Cream, whipped . Drained Crushed Pineapple
¾ Cup Toasted Sweetened Coconut

This reminds me of my mother. It was my favorite cake of hers that she made.She used to make the coconut cake with pineapple between the layers. I miss her everyday and think of this cake often. Thanks for this.

I miss my moms lemon 3 layer cake she made me one every year for my birthday,and she made a coconut cake no pineapple every year only for easter and christmas .Blessings 💛

My grandma use to make this cake for my grandpa. She would add a little fresh squeezed lemon juice to the batter, pineapple flavor and Watkins Pure Vanilla flavor. 😋😋 We all would eat our veggies so we could get some of that cake 🤣🤣🤣

UPDATE: This is the best coconut cake I’ve eaten!!! I just had a chance to taste the cake, today. This is professional quality!!! I can’t wait to make the cake for the Holidays. I put 3 cups of sugar but next time I’m going to use 2 to see if I can tell the difference. The recording says 2 cups of sugar in the cake batter but the recipe says 3 cups. The frosting and filling are very delicious. I could just eat them as a desert. This is far better then store bought cakes or cake mix. I can go on and on and on. ❤❤❤

@@EricandTeresa Printed recipe under the video still says 3 cups of sugar. If it's 2 could you edit that? That's a pretty big difference and would make a difference in not only the flavor profile but the texture.

It is delicious. Just be sure to follow the prepping as suggested. It is pretty detailed. I had a mishap because I forgot about the frosting in the refrigerator and actually manage to use the filling as the frosting as well. No harm done.

I agree with the second sister that made a comment you explain everything bit by bit how many eggs how many cups of sugar how many cups of flour I made your cheese cream cheese pound cake and it was so moist I never used cake batter extract before but it's really good so thank you my sister for taking the time out to share your recipes

I love cooking with Carolyn I soo miss her on her channel I left a message on one of her videos sometime last year, and she replied back, and sad she's caring for her mother, but she replies back to responses, I was happy she replied back so we could know she's alright. Yes, this is a very good pineapple coconut cake. I found it on cook with Carolyn several years ago. There are several steps but it’s worth all the work. 👍🏾

I would just add a strawberry along with the leaves just for a lil color. This is my first time seeing and watching you on KZfaq. The Pineapple Coconut Cake got my attention which is one one if my favorites. But lost the recipe that was given to me years ago and the lady has since passed. Haven't found one to compare until tonight....
