Who said that a plant-based diet is difficult when you have CKD (chronic kidney disease)? In this recipe we are combining plant-based protein from chickpeas with basmati rice and vegetables to make a delicious citrusy summer rice salad. Enjoy the salad as a meal or as a side salad for your BBQ meals. We show how to lower the potassium in chickpeas and how to prepare a colourful summer basmati rice salad with ease!
Note: no need to soak the canned chickpeas if you are not on a potassium restriction. The salad can be prepared in a few minutes.
