Lovely idea! Have noted it for future lunch ideas. One I thought of today is little gem lettuce leaves, (use like bread), put peanut butter in them, grated carrot, maybe some pesto. Wrap in more lettuce leaves, eat like a sandwich.

Just had an idea: baked sweet potato, mashed avocado, chickpeas, and your go-to salad dressing. I am going to try it.

Looks amazing. How long did you steam the potato! I like mine on the form side as well but can never seem to hit the “sweet “ spot so to speak.

Couldn’t tell you; I only watch the time on a couple of things I make. With these, I just keep testing them with a fork until they are where I want them. 🙂
