Easy plum cake with delicious hazelnut cinnamon streusel. Good for freezing and thawing. Since the batter is made without yeast, the cake can be topped and baked immediately after preparation.
You can easily double the quantities to make a plum cake from sheet.
If you like, you can replace the ground hazelnuts for the streusel with the same amount of ground almonds or flour. The recipe works with both wheat and spelled flour.
The only important thing is that after adding the flour and baking powder, the cake batter is stirred only briefly and baked as soon as possible. Everything else should therefore already be prepared and the oven should already be preheated so that the cake batter can go into the oven quickly after preparation.

👩🍳 Ingredients for a 10'' (26 cm) baking pan:
You can easily double the quantities for a plum cake from sheet. The exact baking time may vary slightly depending on the oven.
For the hazelnut cinnamon crumble:
🔸1/2 cup (60 gr) of flour
🔸1/3 cup (75 gr) of sugar
🔸1/2 cup (50 gr) ground hazelnuts
🔸1/2 tsp cinnamon
🔸1/3 cup (75 gr) soft butter
For the cake batter:
🔸1/2 cup + 2 tbps (140 gr) very soft butter
🔸2/3 cup (75 gr) icing sugar
🔸2 tsp of vanilla sugar
🔸Lemon zest
🔸2 eggs
🔸1 3/4 cup (200 gr) of flour
🔸2 - 3 tsp baking powder
🔸2 - 3 tbsp yogurt
