this is super informative and easy to follow! is there a way to do this in illustrator?

Thanks! I don't use illustrator so don't know for sure, but I believe you can add a stroke around text. I'm just not sure if you can do the same type of merging with other layers to delete the stroke area in the exact same way. Sorry I can't help more with that! I just don't have the experience using illustrator to know for sure.
