I recently discovered your channel. I can not tell you how much I appreciate you and your husbands work! I am born and raised outside the Detroit Michigan. All of our Holiday feast that we have were taught to us as having Polish roots. Most of my grandparents and their siblings were born and raise in Hamtramck Michigan if not from the "Old Country." Hamtramck is where we get our paczki for fat Tuesday, I know its not Thursday in the states. They even have a statue of Pope John Paul II, it was up well before his canonization. I digress, my point is I there is so much my family has lost or hasn't experience because no one wants to put in the work. I am hoping to restore that with your help, and maybe a family member or two. Thanks again, and I am definitely buying your book for myself and those family members that will be helping me.

Three of my grandparents were Polish Americans so I grew up eating Polish foods. Since I have been watching your videos I will be making more Polish meals. I live in Myrtle Beach, South Carolina and we have a Polish deli here (Pulaski Deli). I get my sausage, kiska, farmers cheese, cucumbers in brine, and other items.

Have you ever tried to make bigos (Polish hunter's stew)? This is the most Polish and the best dish in Polish cuisine (in my opinion). Cooking this is very satisfying - you can try to find the perfect balance between sour, sweet and salty flavor. Don't use tomatoes, but the red wine and plum jam (powidla) instead. You can find many recipes on the Internet. Each begos is unique - this is kind of art ;-)

Love the soup. I used to pick mushrooms with my uncle or grandfather in the forests around Krynica. Unfortunately, I wasn't as expert as I believed. My auntie in Krynica fried them up in butter for me one morning and my dad took me to the church in Krynica. Half way through mass I suddenly felt very dizzy and sick and just made it to the steps outside the church before being violently sick. Fortunately the bad mushrooms were not as bad as they can get or I wouldn't be here today. Wild mushrooms are still my favourite of all foods.

Christmas food traditions are so fascinating. Some families are very focused on their cultural heritage, while others aren't so traditional. Growing up in a predominantly German family here in Minnesota... my mom would always make lasagna on Christmas eve. Not exactly a standard German meal, but that is what my mom used to make since we all loved it. My dad was a little more traditional and made himself a small pot of oyster stew later on in the evening, and he always enjoyed smoked fish and pickled pigs feet! I hope that you are thinking of making bigos sometime in the next few weeks! Happy Thanksgiving!

FOOD is one of the key ways to preserve national culture. Mastering a country's cuisine teaches you ALL about its origins, geography, history, etc. See? Betcha never thought you were going to "HISTORY CLASS" each time Mama or "Bapcia" cooked for the holidays, eh? So eat, enjoy and revel in YOUR history too! PS: Don't forget to thank the "teachers" with a kiss afterwards!####

I cook this soup (my favourite) from 3 ingridients: dried (!) bolete mashrooms/penny buns, onions and cream (NOT sour, 30% of fat) Then I season it with salt and pepper only. The bolete mashrooms/penny buns have enaugh of flavor and color without any vegetables or additional ingridients. You can serve this with noodles, macaroni, bread, whatever. Some people like it with potatoes (I don't). Enjoy!

We have used dried snow white mushrooms, you just have to slice and dry them yourself. Just spread them out on a cookie sheet and place them in a cool, dry area. Warning, they get a bit smelly. The dried mushrooms have a intensified flavor. I love this soup more than the American type of mushroom soup.

While it is strictly true that the use of animal products is traditionally not used, there are many families that don't follow those restrictions. Zwyczaj ten przetrwał w Polsce i na Litwie ponad tysiąc lat i chyba warto go zachować.
