I've been looking for a rye recipe video for weeks that explained things as clearly as this. I don't have a lot of bread baking experience and don't quite understand the timing and kneading too well. Then this video pops up on my suggestions and it's everything i was looking for. Thank you!

Made your delicious bread. My wife is Polish but I'm Norwegian and the cook! Did an eggwash on bread and came out shiny and glazed. Nice little touch. I too love smoked fish!

Super yum! For those who can't find rye flour, I used half white and half wholemeal flour. Tastes amazing. I did add another 20ml of water because the dough was too dry for me. I also added extra seeds for that Rye flavour :) Thanks for this recipe hehe delicious

I'm from Poland and I must say it looks amazing.You inspired me in many ways:) ( my boyfriend loves your curry and bread recipes as well :) It is hard to find a nice polish bread in UK because they are all imported and packed in plastic bags and taste like rubber:/ They taste nothing like polish bread. I made your baguettes yesterday and I must say those were the best baguettes I have ever had in my life!!!

I was working in Poland a while back and loved the bread there. When backing the UK I found a polish shop that sold it. I now am in India. I must make this.

Been eating bread my whole life figured it was time to see how it's done. Love rye and your instructions are spot on though substituted sugar for the honey (none in the house). Getting ready for round 2 kneading and the double in size again stage. Hope it can stay over night and 100 minutes was enough. Actually is quite a nice size already. Tomorrow I will bake so I hope it can stay overnight on the pan. I will find the appropriate corned beef worthy of such a wonderful creation. Thank you. Excellent video and perfect step by step.

Another beautiful loaf of bread! When you say strong while flour do you mean AP or bread flour? I made your bagels and they came out perfectly. A first for me. agreed. I am getting tired of all the plastic wrap, i have not used plastic in YEARS instead i have a great corning bowl with a glass lid or if you need "plastic" you can buy biodegradable green earth brand bioplastic bags they are compostable. thanks!

Titli, what nationality are you? How did you learn to make polish bread? Anyway, polish rye bread is delicious for any sandwich, not just smoked meat, smoked fish and smoked cheese. You can put almost anything (edible of course - like chicken breast or turkey breast or any ham plus a good cheese like regular, not smoked, Gouda and maybe slice of tomato and a couple of rings of onion)) between 2 slices of bread and put it in the toaster oven for few minutes -- omg, it sounds so good that it's making me hungry. Thank God for the polish bakeries in Chicago and delish polish rye bread.

Titli, I miss my moms bread now that I'm 65 and still missing her bread, I've taken up baking. My loaves are coming out tastie, nice crust. I have been scoring the tops. I even use a proofing basket to control the shape. My problem is that out of the oven the loaf splits and separates along a seam were the loaf starts at the bottom, right across one end to the other. I can send you pictures. Don't know what's wrong. It looks like the loaf exploded and the top is trying to leave the base. Bill

Is it possible the seam you fold the bread over isn't on the bottom but on the side? That can certainly make the top and bottom separate. Or it could be that you're not scoring deep enough; it should be about half an inch or a centimeter deep to control the loaf. Hard to tell without a picture, but good luck!

Hello! I love your channel and I have made a couple of your bread multiple times! I haven't been successful with this Polish bread. I have tried it 3 times and every time my bread is too dense and the crust is as hard as a rock. This last time, my dough was so tough and it was ripping as I was kneading it. It did rise quite a bit both times, but it was just too dense. I did not add any extra flour and wonder if perhaps I should I added more moisture. I was thinking about using less rye, and more white flour, however, you don't seem to have this problem. Any ideas will greatly be appreciated! Your challah is currently in my oven, and it is looking perfect, but my Polish one isn't so pretty!

I had the same problem, but realized the dough was too dense, so I added a little more water as I was kneading it and it softened up and the bread turned out well. I've this recipe multiple times and it's wonderful. My husband is from Poland and he said it is better than anything you can buy.

I don't know what is going wrong but I tried this recipe exactly as written with 1/2 a non- gluten flour and 1/2 rye flour and it flopped. Hard and flat and certainly didn't rise. Because there is no egg, could this be the reason? Not happy...
